<p><strong>Banyan Tree Bangkok</strong> has launched Saffron Grill, a new dining destination dedicated to fire-driven Thai cuisine and the newest chapter in the hotel’s Saffron portfolio. The opening expands the Saffron family, joining Saffron, Saffron Sky Garden, and the Saffron Cruise on the Chao Phraya River, with a concept centred on Thailand’s grilling traditions reimagined through modern technique and deep cultural roots.</p>
<p><span id="more-34265"></span>Saffron Grill’s design follows the Fleur and Flame concept, where nature and fire exist in quiet balance. Fleur reflects Thailand’s deep ties to flora, ritual, and craftsmanship, while Flame embodies movement, energy, and the primal spirit of Thai cooking, shaping an atmosphere that feels contemporary yet culturally rooted. Moreover, sustainability underpins every aspect of the experience, from sourcing to waste reduction. The restaurant works closely with Thai farmers and local producers, including Klong Phai chicken, river fish from Nakhon Sawan, and seed growers in Chiang Mai.</p>

Chef Wong from Hotel ICON in Hong Kong and Chef Simon from Banyan Tree Bangkok’s renowned Bai Yun restaurant will once again join forces to craft an exceptional eight-course menu that promises to enchant the palate.</p>

<p><b>Banyan Tree Bangkok is delighted to announce the appointment of Christoph Trocker as the new Executive Chef.</b></p>
<p>In his role as Executive Chef, Chef Christoph oversees the culinary excellence throughout the hotel. From the range of gourmet restaurants offering everything from Thai fine dining, international and Asian gastronomic experiences to Bangkok’s iconic roof top bar and restaurant, as well as banqueting facilities and the two dining cruises Apsara and Saffron Cruise. At Banyan Tree Bangkok guests are truly able to find a suitable dining venue for every occasion.</p>
<p><span id="more-26648"></span>Chef Christoph is a seasoned professional who has worked with some of the world’s most prestigious hotel brands, including Jumeirah and Hyatt. Chef Christoph discovered his love for culinary arts early in his teens and received his degree in 1997. He began his career in his homeland Austria, followed by Switzerland and Germany, before continuing his journey to more far-flung destinations and finally taking his career path east where he also perfected his skills in fine dining.</p>
<p>Chef Christoph also supervised banquets and wedding receptions with over 3,400 square meters of event space, and further gained incredible experience in this field during his work in Shenzhen and Shanghai in China.</p>
<p>Prior to joining Banyan Tree Bangkok, Chef Christoph led the team at Mövenpick BDMS Wellness Resort Bangkok, where he successfully ran four restaurants with high passion. With nearly three decades of experience in the culinary industry, Chef Christoph is sure to bring a wealth of expertise to the team and memorable dining experiences to the guests.</p>

<p style="text-align: left;" align="center"><b></b>Banyan Tree Bangkok, in collaboration with Thai Airways Sri Lanka, is delighted in announcing an exclusive, limited-time appearance by guest chef Dharshan Munidasa. The Sri Lankan seafood and Japanese cuisine expert makes Vertigo TOO the venue for his final and much anticipated pop-up in Bangkok.</p>
<p style="text-align: left;" align="center"><span id="more-14756"></span>One of the most famous personalities in Sri Lanka, the renowned celebrity chef, TV host and restaurateur is best known for having founded some of Sri Lanka’s most successful restaurants, garnering not a little admiration, accolades and awards. In 1995 he launched, Nihonbashi, which offers fine Japanese cuisine that uniquely mingles local ingredients with Japanese culinary artistry. Then 2011 saw Chef Dharshan open the enduringly-popular Ministry of Crab, an eatery dedicated to Sri Lanka’s world famous lagoon crabs.</p>
<p id="yui_3_16_0_ym19_1_1533062328986_8903">Both restaurants bear the distinction of being the only names from Sri Lanka to have appeared on “Asia’s 50 Best Restaurants List” each year since 2015. Ministry of Crab ranked 29<sup>th</sup> on the list’s 2017 edition, with Nihonbashi at number 49.</p>
<p id="yui_3_16_0_ym19_1_1533062328986_8653">Bringing his singular cooking talents to the kitchens of the Vertigo Too—Banyan Tree’s 60<sup>th</sup>-floor view lounge and restaurant—for just three days starting 9 August, Chef Dharshan will be offering a 4-course menu featuring a selection of his signature crab and prawn dishes. At 3,800++ per person, the menu features the highlight Pepper Crab, a sharing dish which makes ample use of the piquant corns; a creamy Crab Liver Pâté on toast starter; the risotto-like Baked Crab; and Garlic Chili Prawn cooked in olive oil.</p>
<p id="yui_3_16_0_ym19_1_1533062328986_8905">His signature approach to cooking with which he has put Sri Lanka on the world culinary map, along with his masterful use of Japanese cooking philosophy earned him the 2017 Business Today Passionate Award, as well as the (Japanese) Minister’s Award for Overseas Promotion of Japanese Food in 2014 for his contributions to Japanese culture.</p>
