<p>This November, UNO MAS restaurant is excited to welcome back Chef Fernando P. Arellano of the highly acclaimed, Michelin star “Zaranda” restaurant in Mallorca, Spain.</p>
<p><span id="more-25518"></span>For two days only, this award-winning chef will be hosting a specially curated tasting menu at Bangkok’s 54th-floor UNO MAS restaurant — known for its blend of both authentic and creative Spanish and Mediterranean cuisine.</p>

<p>Chef Fernando P. Arellano will be with us in Bangkok on the <b>25th and 26th of November 2022. </b></p>
<p>Fernando Pérez Arellano (Madrid 1978) developed most of his experience working in different countries where, in addition to the achievement of cooking skills, he developed his language abilities.</p>
<p>Having trained in some of Europe’s best restaurants he gained the experience required to take on his own restaurant.</p>
<p>In September 2005, he opened Zaranda, a tiny modest restaurant in Madrid.</p>
<p>After 11 months being open, Zaranda received its first star in the Michelin Guide and later, was also awarded two rosettes in the Repsol Guide.</p>
<p>Five years later, Zaranda and all his team faced a new challenge moving their project to Mallorca.</p>
<p>In November 2015, he received his second Michelin Star after 10 years from its opening. During the last years, Zaranda was named second best hotel restaurant in Spain for the national newspaper &#8220;El País&#8221;</p>
<p>In 2020, the restaurant was relocated within the Es Princep hotel in Palma’s old town (Mallorca) where it has been recognized of its first Michelin star just after the opening.</p>
<p>At UNO MAS, highlight taste experiences to look forward to on his multi-course menu include<b> “Majorica Oyster”</b> freshly shucked pickled pearls, horseradish &amp; caviar,<b> “Amphora” </b>slightly spicy rock octopus All I pebre,<b> “The Black Egg” </b>white onion and cuttlefish caviar,<b> “Seared Amberjack”, </b>roasted red peppers coulis and piquillo pepper leather<b>, “Spanish Wagyu Beef” </b>coal grilled endive, crispy pulled beef, <b>“Sweet Burrata</b>”, goat milk cream &amp; skin, strawberries, and basil.<b> </b></p>

<p><b></b>Fans of Spanish fine dining are in for a treat this November as UNO MAS restaurant welcomes guest Chef Fernando P. Arellano, owner of the 2-Michelin star restaurant Zaranda in Spain.</p>
<p><span id="more-15406"></span><b>Chef Fernando will be swapping the peaceful countryside of Mallorca &#8211; the Balearic island where his award-winning Zaranda restaurant is located &#8211; for the bright lights of Bangkok, where he’ll be hosting a one-night-only gala dinner at UNO MAS (Friday 30 November, 2018). </b></p>

<p>In 2005, the globe-trotting chef opened his first restaurant, Zaranda, in Madrid, which would go on to pick up a Michelin star the year later. Five years on, Chef Fernando relocated to Mallorca where his restaurant of the same name currently holds two of Michelin’s converted stars.</p>
<p>With a dedication to using only the freshest premium ingredients together with lashings of creative Spanish flair, Chef Fernando’s eye-catching menu for the night has already been released… just to get us in the mood.</p>

He translates Spanish and Catalan flavors inspired by his heritage and personal culinary memories into contemporary produce-driven dishes through a mix of traditional and modern techniques.</p>

Next is <b>Iberico Pork Jowl</b>, chipotle, pickled pear, togarashi and <b>Grilled Spanish Octopus</b>, Jerusalem Artichoke Puree, Burnt Onion, Bacon Oil.Then, <b>Wagyu beef cheeks</b>, &#8220;mole poblano&#8221;, baby corn, sour cream and <b>BBC: Beer Stout Ice Cream</b>, Banana, Warm Salted Caramel. </b><b>One Star Michelin Chef Roberto Terradillos</b> originates from El Serbal restaurant in Santander tonight he presents his seven-course dinner beginning with Tapas of both Cod and Suckling lamb, then progresses to Gillardeau Oysters highlighted by Chef Roberto’s emulsion accented by spinach and herbs. Cured trout and Sheep’s cheese are then paired with beetroots and citric. Foie gras is laced with Licorice oranges and pine nuts. Fried Hake is delicately prepared and accompanied with leeks and French bean jus. Iberian “Peresa”Charcoal fried, lastly lingering flavours of Thyme winter pumpkin and dark chocolate, bring to a close this evenings journey. <b>Priced at THB 3,900++ per person</b> available from 19.00 &#8211; 21.30 hrs.</p>

Lobster medallions are accompanied with Lobster butter and salmon roe, Cocido Lebaniego stew highlights and accented with crispy pancetta, following this King of the Sea is a confit of black Cod, Oxtail braised in red wine, is the next stop on this culinary journey, and the last stop for the evening rests at a creation of Spanish Chestnuts, citric and Chocolate. <b>Priced at THB 3,900++ per person</b> available from 19.00 &#8211; 21.30 hrs.</p>
