งานดินเนอร์คริสต์มาส  สมาคม เชน เดส์ โรติสเซอร์ส จัดโดย แชปเตอร์ กรุงเทพ รัตนโกสินทร์  ณ โรงแรม  The Ritz Carlton

สนุกสนาน มีความสุข  ทุกครั้งที่มางาน เชน แม้จะออกจาก การเป็นกรรมการสมาคม มานานหลายปี (ให้โอกาสคนเก่งอื่น ๆ ทำงานมั่ง)  ทั้งในฐานะสมาชิก  และ ตำแหน่ง Chargée de presse honoraire  ที่ยังคงไว้  (สังเกตได้จาก ริบบิ้นเชน สีน้ำเงิน ที่เป็นสีของคณะกรรมการ ยกเว้นตำแหน่งนายกสมาคม ที่เป็นสีเขียว)

หัวใจหลักของงาน ที่ เชน ให้ความสำคัญ คือ Excellence ความเป็นเลิศด้านอาหารและไวน์  ควบคู่กับ Camaraderie มิตรภาพอันอบอุ่นท่ามกลางคนรักอาหารและการกิน  (สมาชิกสมาคมนี้ไม่นิยมคุยธุรกิจ  ต่างจากสมาคม networking อื่น ๆ  ความสุขจะอยู่กับ conversation ที่หมุนรอบ  food & drinks  คุยกันไป กินไป ดื่มไป  มีความสุขกับเพื่อนรู้ใจ  ใครตั้งใจจะมาคุย business  คือมาผิดงาน)

งานค่ำคืนนี้สนุกสนานมากมาย  บรรยากาศเพื่อนสมาชิกดีเยี่ยม  อาหารดีเลิศ  เป็น Eight Hands Celebration  โดย Chef Valentin Fouache, Chef Glen Cooper, Chef Silvain Constans of the Ritz Carlton and Chef Wilfrid Hocquet of Bistro Margo. ขอขอบคุณผู้จัด Molchaya Techapaibul, Bailli, Natayada Na Songkhla, Chancelier และคณะกรรมการทุกท่าน  สำหรับความสุข ความสนุก และความรู้สึกดีๆ ในช่วงเทศกาลต้อนรับปีใหม่นี้

Chaîne des Rôtisseurs – เชน เดส์ โรติสเซอร์ส  มีต้นแบบมาจากประเทศฝรั่งเศส  เป็นสมาคมด้านอาหารเก่าแก่ก่อตั้งมายาวนานที่สุด ตั้งแต่ศตวรรษที่  13  วัตถุประสงค์คือ  ส่งเสริมศิลปะด้านอาหาร  ท้ังผู้ปรุง   ผู้ชิม   และศิลปะเกี่ยวเนื่องกับวัฒนธรรมการครัวและการกิน โดยไม่ยกเว้นว่าจะเป็นชาติใด ๆ

ปัจจุบัน เชน เดส์ โรติสเซอร์ มีสมาชิกกว่า 25,000 คนใน 70 กว่าประเทศทั่วโลก  ในประเทศไทย เชน เดส์ โรติสเซอร์ ก่อตั้งขึ้นในปี 2517 โดย ม.ล. อัศนี ปราโมช ได้รับการเลือกตั้งให้เป็นนายก ฯ คนแรกของสมาคม ฯ

Premier Gastronomic Association Chaîne des Rôtisseurs, led by Bailli Déléguée Bangkok Chapter Molchaya Techapaibul, hosted an exquisite French dinner at Restaurant Stage Bangkok. Other committee members attending the event were Joe Thawilvejjakul, Bailli Délégué National, Arto Artinian, Bailli Délégué Honoraire, Natayada na Songkhla, Chancelier National and Alessandro Haab, Conseillé culinaire.

สมาคมอาหารระดับนานาชาติ  เชน เดส์ โรติสเซอร์ส นำโดย มลชยา เตชะไพบูลย์ นายกสมาคมเชน แชปเตอร์กรุงเทพ ฯ  จัดงานดินเนอร์มื้อค่ำท่ามกลางมวลสมาชิก ที่ Stage ห้องอาหารฝรั่งเศสน้องใหม่ในซอยเอกมัย  โดยเชฟเจย์ สายนิสา แสงสิงแก้ว (อดีตหัวหน้าเชพร้าน 1 ดาวมิชลิน  Atelier de  Joël Robuchon) และเชฟขนมหวาน เรขา ลิมปิชาติ จับมือกับ หลุยส์ พลฤทธิ์ ซอมเมอลิเยร์  ร่วมกันรังสรรค์เมนูอาหารฝรั่งเศส 5 คอร์สแพร์เลิศรสกับไวน์ชั้นดี

เชน ไทยแลนด์ ก่อตั้งมานาน 46 ปี  เป็นหนึ่งในสมาชิกทั่วโลกของสมาคม ฯ แม่แบบจากประเทศฝรั่งเศส  หนึ่งในวัตถุประสงค์หลักคือให้การสนับสนุนการพัฒนาศิลปะด้านการปรุงอาหาร และพัฒนาบุคลากรในวงการอาหาร  การจัดงานของเชนทุกครั้ง จึงเป็นโอกาสให้เกิดการเทรนนิ่งของบุคลากร  เป็นการร่วมกันบริหารจัดการตั้งแต่ทีมงานเชฟในห้องครัว  พนักงานเสิร์ฟ และ sommelier ผู้เชี่ยวชาญด้านไวน์  ที่ต้องประสานเป็นหนึ่งเดียว  เพื่อให้งานดินเนอร์ออกมาราบรื่นและสวยงามลงตัวอย่างที่สุด

ทั้งนี้ทั้งนั้น เชนฯ มิได้เชิดชูเฉพาะศิลปะอาหารฝรั่งเศส  แต่ยังให้ความสำคัญกับอาหารท้องถิ่นเอกลักษณ์ของทุกชาติ  เชน ไทยแลนด์ จัดมื้อค่ำมาแล้วมากมาย ทั้งอาหารไทย จีน ญี่ปุ่น อินเดีย สเปน และอิตาลี

ตบท้ายด้วย  Baba au Rhum เชฟของหวาน เรขา ลิมปิชาติ เล่าว่า เมนูนี้เป็นของหวานจานโปรด แต่สูตรนี้ทำต่างจาก บาบา ดั้งเดิม ด้านใต้ทำเป็นโฟมสับปะรดให้รสเปรี้ยวแบบไซทรัส ถือเป็นการล้างปากจากเมนคอร์สไปในตัว  ด้านข้างเป็นคูลีส์ครีมช็องตียี่กับสตรอร์เบอร์รี่และแครนเบอร์รี่  ส่วนขนมปังแช่เหล้ารัม ปรุงรสชาติแบบกลาง ๆ   หากดีกรีรัมยังแรงไม่ถูกใจ  มีพนักงานถือขวดมาเทเติมให้ตามใจชอบ

Chaîne Thailand Celebrated an Evening of Chapitre Gala Dinner

Premier gastronomic association Chaîne des Rotîsseurs, Thailand Bailliage,  hosted an annual gala dinner recently at the Residence of The Grand Hyatt Erawan Bangkok Hotel. The so called Chapitre or Chapter dinner is Chaîne’s major event where members get together annually.  It is  also served to welcome new members and recognize long standing  members who contributed to the association.

สมาคมด้านอาหาร  เชน  เดส์ โรติสเซอร์ ประเทศไทย จัดงาน กาล่าดินเนอร์ประจำปี ที่เรียกกันในชื่อ Chapitre dinner เมื่อเร็ว ๆนี้ ที่โรงแรมแกรนด์  ไฮแอท เอราวัณ กรุงเทพฯ งานนี้นอกจากจะเป็นงานใหญ่สังสรรค์ประจำปี ยังเป็นโอกาสต้อนรับน้องใหม่เข้าเป็นสมาชิกสมาคม ฯ

อนึ่งวัตถุประสงค์ในการก่อตั้งสมาคม ฯ อันมีแม่แบบมาจากฝรั่งเศส ก็เพื่อสนับสนุนการพัฒนาศิลปะและศาสตร์ในการปรุงอาหาร   โดยเฉพาะศิลปะอาหารชั้นสูงในแบบที่เรียกว่า แกสโตรโนมี ทั้งนี้มิได้มีการจำกัดว่าจะต้องเป็นอาหารฝรั่งเศสหรืออาหารชาติใด

Chaine des Rotisseurs Austria Celebrates 50th Anniversary Grand Chapitre

Anniversaries are always a reason to celebrate. Even more so when it comes to celebrating an association that has put the high art of gastronomy and the culture of the table on its flags. More than 250 guests from four continents followed the invitation of Bailli Délégué Norbert Simon to celebrate this extraordinary “Imperial” Grand Chapitre.

First day : In glorious early evening sunshine Maître Restaurateur Stephanie Huber from Das Schreiberhaus welcomed members and guests with Kattus sparkling wine in the middle of the romantic vineyards on the outskirts of Vienna. Afterwards a typical wine tavern (Heurigen) buffet was served whilst being entertained with Viennese Schrammel music. Finally, the weather god banished us to the characteristic rooms of the tavern. All in all it was a successful debut to the four-day programme!

Second Day: The highlight was the dinner themed “Wien, Wien nur du allein” (Vienna, Vienna, nothing but) at the Hotel InterContinental Vienna where Maître Hôtelier Brigitte Trattner welcomed us with an exceptional menu. Between courses, Professor Marcela Cerno, internationally known as an opera and operetta singer, spoiled us with Viennese songs which especially pleased our guests from abroad.

Third Day: The Induction Ceremony took place at the Palais Pallavicini starting with the fanfare composed by Richard Strauss for the opening of the first Vienna Philharmonic Ball.

Bailli Délégué Norbert Simon gave an overview of the 50-year history of our Bailliage before International Vice-President Marie Jones officially opened the proceedings.

Marie impressively referred to the values of the Chaîne and their importance in terms of international presence particularly for our professional members. She emphasized the gratifying fact that many young people were ready to be inducted at this ceremony, an important development for the Chaîne in Austria and worldwide. Klaus Tritschler, Member of the Conseil d’Administration from Germany assisted with the inductions.

At the end of the festivities, the Pallais Pallavicini spoiled us generously with Viennese specialties and Szigeti sparkling wines.

That evening, members and their guests were welcomed at the Ritz Carlton with Pommery Champagne before Maître Rôtisseur Andreas Mahl invited us to the Crystal Ballroom for an eight-course Grand Gala Dinner accompanied by great wines.

June 24: “Farewell Vienna” was celebrated at the Palais Hansen Kempinski. Long-time Chaîne member, General Manager Gerhard Mitrovits, Bailli Honoraire, treated us to a Pommery Champagne lunch with live music. In addition to the buffet, specialities were served such as salmon, cassoulet of asparagus, beef, polenta, summer truffle and nougat.

Truly an extraordinary “adieu”!

Appreciation was given to all participants for their efforts. There is no doubt, the 50-year Jubilee of the Bailliage of Austria will remain memorable forever.

Chaine des Rôtisseurs Young Chef Competition 2018, Thailand

For many years the Young Chefs Rôtisseurs contest has been organized in most of the Chaîne des Rôtisseurs member countries around the world, as well in our neighboring chapters. This year Chaine Thailland was happy to announce the 1st Young Chefs Rôtisseurs Contest held at the Dusit Thani Excellent Center.

Thailand is becoming more and more a leading destination in gastronomy by offering a variety of international cuisine, Chaine Thailand takes this opportunity to promote the new and young talented chefs to come and show their skills and talents by preparing fine dishes, and also to give them the opportunity to travel to other countries to expand their experience by bringing along a flavour of Thailand and its art of food to the world.

The winner of this contest received not only cash prize but would also enjoy an opportunity to compete in the International Young Chef Rôtisseurs  Competition event this year which will be held in Taipei in September 2018.
