His illustrious career includes the esteemed Cheval Blanc in Nimes, under Thierry Marx, and also Alain Ducasse at the Essex House in New York City, as well as the two-Michelin-Star restaurants Oustau de Baumanière, in Baux-de-Provence, and Le Strato, in Courchevel, before earning his own two Michelin Stars at Sylvestre Restaurant inL&#8217;Hôtel Thoumieux, Paris, France.</em></span></p>
