<p>Chef León’s pioneering work at his restaurant Aponiente in Cádiz, Spain, has been awarded three Michelin Stars and a Michelin Green Star for its commitment to sustainability by discovering new sea ingredients, cultivating marine plants and using previously overlooked marine products.</p>

<p>He has drawn acclaim for turning ocean research into high cuisine, particularly through his innovative use of pure marine phytoplankton, a highly nutritional and sustainable ingredient packed with the likes of protein, fiber, and omega-3 fatty acids, as well as the development of cultivating a “sea rice” from eelgrass in the ocean’s waters.</p>
<p>In a bold reimagining of what ocean ingredients can be, “Plankton Rice” is a rice dish infused with pure marine phytoplankton, the microscopic algae that form the base of the ocean’s food chain, making the dish vivid emerald in colour with an aroma reminiscent of the open sea. After many years of research, Chef León was the first chef in the world to obtain authorisation to use 100% natural, food-grade phytoplankton in cuisine.</p>

<p>The 208-room urban lifestyle hotel, which has been recognised by the prestigious <i>Conde Nast Traveler</i> Readers’ Choice Awards 2025 as among the Thai capital’s top four hotels, will offer Plankton Rice following ‘Stars of the Sea: A World-Class Culinary Journey’ on the evening of Dec. 29 at LUZ. The event features both Chef León and Juan Ignacio García Racionero, a.k.a “Chef Nacho”, LUZ’s chef de cuisine. Organised by Melia Hotels International, the tasting journey will be underpinned by Chef León’s signature marine philosophy and Chef Nacho’s “Spanish tapas with soul”. <p>Chef León’s groundbreaking research has also focused on harvesting small edible seeds, that behave much like rice or quinoa yet are cultivated entirely underwater, from eelgrass, a bountiful marine plant growing naturally in coastal waters. The grain absorbs the flavour of the sea and, like pure marine phytoplankton, offers potential as a new model of sustainable food production. Eelgrass salt-water meadows require no freshwater irrigation, pesticides, or arable land; resources heavily consumed by conventional rice and cereal crops. Eelgrass also sequesters large amounts of carbon dioxide from the atmosphere.</p>

<p>As 2025 draws to a close, <strong>INNSiDE by Melia Bangkok Sukhumvit</strong> is embracing the festive spirit with delectable Spanish menus, buffet feasts and a sky-high countdown party, all set against panoramic views of Bangkok’s skyline.</p>
<p><span id="more-34077"></span>The 208-room urban lifestyle hotel, which has been recognised by the prestigious <i>Conde Nast Traveler</i> Readers’ Choice Awards 2025 as among the Thai capital’s top four hotels, will present its “Feliz Festiva” program from Dec. 1, 2025 to Jan. 1, 2025.</p>
<p>The hotel, which debuted in 2023 in Bangkok’s vibrant On Nut neighbourhood, has quickly become known for its transparent infinity pool, authentic rooftop Spanish tapas bar, integrated co-working spaces and contemporary design referencing some of the city’s most iconic landmarks.</p>
<p><b>LUZ Bangkok Tapas Bar serves four weeks of festive Spanish dishes </b></p>
<p>Perched on the hotel’s uppermost floors – the 33<sup>rd</sup> and 34<sup>th</sup> floors – LUZ Bangkok Tapas Bar will mark the season to be jolly with a rotating “Special Spanish Festive Menu” each week for four festive weeks from Dec. 1 until Dec. 30</p>
<p>Each week’s a la carte menu, crafted by Madrid-born chef Juan Ignacio García Racionero, offers a selection of dishes celebrating Spain’s famed gastronomy such as ‘Iberian bellota jamon croquettes with caviar’, ‘Spanish red prawn carpaccio’, ‘Spanish Seabass with porcini &amp; parmentier’, and ‘Cannelloni of beef oxtail, foie gras &amp; black truffles mushroom’ and ‘Caramel custard pudding, almond &amp; Spanish nougat’. The prices of the dishes vary from THB 490<b>++</b> for desserts and sorbets to THB 2,290<b>++</b> for premium mains.</p>
<p>LUZ will also serve exciting Christmas Eve, Christmas Day and New Year’s Eve a la carte menus. The Dec. 24 and Dec. 25 menus will be on offer from 4pm until midnight. Standard indoor–outdoor seating is priced at THB 2,000 net per person. Premium lower-deck seating with private skyline views is THB 3,000 net per person.</p>
<p>Served across two sessions, from 5-7pm and 8pm until late, The New Year’s Eve menu is brimming with favourites such as the ‘La Tabla of Spanish cured meats and cheeses’, ‘Grilled octopus, olives, pickled paprika and olive oil’, ‘White anchovy, olives, Basque chili, red pepper and tuna’, ‘Bluefin tuna Chutoro tataki with pistachio soup’, ‘New Zealand lamb rack, roasted eggplant puree, Thai basil’, ‘Australian Angus beef (250 day), potato &amp; Spanish pepper ‘ and ‘Cava lemon sorbet’.</p>
<p>The first seating is THB 1,500 net per person for both the indoor–outdoor seating and lower-deck seating areas. For the second session, standard seating is THB 3,000 net per person and lower-deck seating is THB 4,000 net per person, each offering sweeping views of the city.</p>

<p><b>The Kites Eatery offers Christmas Eve and New Year’s Eve buffet spreads</b></p>
<p>With its soaring windows affording spectacular views, all-day dining restaurant The Kites Eatery will serve, under the stewardship of executive chef Katisak Pinkaew, Christmas Eve and New Year’s Eve buffet dinners from 6-10pm and 6-11pm respectively.</p>
<p>The buffets will brim with all sorts of treats including seafood on ice, salads, cheeses, a Japanese corner with assorted sashimi, BBQ seafood and meats, a carving station, an array of main courses, a chocolate fountain, desserts and more. Free-flow alcohol is optional.</p>
<p>Both the Christmas Eve and New Year’s Eve dinners are THB 2,600++ per adult and THB 1,300++ per child under 12. Optional free-flow sparkling, wine &amp; beer is THB 1,600++ per person. <p>Revellers will bid farewell to 2025 and count down the new year at the Giant Swing Pool Bar for a night of rooftop fun and music from live DJs from 6pm on Dec. 31 until 1am on Jan. 1.</p>
<p>The rooftop party’s entry fee is THB 1500 net per person and includes a glass of sparkling wine, or THB net per person for the free-flow beverage package. Special rates for in-house guests and restaurant guests are THB 1,100 per person and THB 500 respectively, with a glass of bubbles included.</p>
<p>Exclusive table packages are available for the countdown party. The VIP terrace package, for two to four guests, and the Upper deck lounge package, for four guests, each have a minimum spend of THB 15,000 per table.</p>

<p><span id="more-31984"></span>The Spanish Institute for Foreign Trade (ICEX), an agency of the Spanish Ministry of Industry, Tourism and Trade behind “Restaurants from Spain”, said the certification was designed to establish quality standards and criteria for consumers who look for not only quality Spanish cuisine but authentic quality Spanish cuisine.</p>
<p>ICEX recognises and supports restaurants around the globe focused on authentic cuisine and produce from Spain, and in turn Spanish culture, guaranteeing a level of quality of these establishments. The certification is awarded following a stringent selection process by a joint committee composed of official institutions and sectoral associations strongly linked to gastronomy, such as the Royal Academy of Gastronomy, the Ministry of Agriculture, FACYRE, the Regulatory Council for Sherry Wines, ANFACO, INTERPORC, the Spanish Wine Federation, the REPSOL Guide and the Ministry of Tourism of Castilla La Mancha.</p>

<p>BANGKOK &#8211; The new INNSiDE by Meliá Bangkok Sukhumvit will celebrate its first festive season with delectable Spanish menus, buffet feasts and a sky-high countdown party, all accompanied with sweeping views of Bangkok’s skyline and a distinct Ibiza vibe.</p>
<p><span id="more-29049"></span>After its debut in July this year in Bangkok’s lively On Nut neighbourhood, the 208-room urban lifestyle hotel, with an array of remarkable facilities, ranging from a transparent infinity pool and authentic Spanish tapas bar to integrated co-working spaces, will host its festive program from Dec. 24, 2023 to Jan. 1, 2024.</p>
<p>The hotel’s festive program’s dress code is ‘Ibiza glam’; think flowing white dresses, shirts, and pants, with a touch of glitter and gold.</p>
<p>Commanding the hotel’s uppermost floors – the 33<sup>rd</sup> and 34<sup>th</sup> floors – LUZ Bangkok Tapas Bar will take diners on a culinary journey of Spain with exquisite set menus crafted by Spanish chef Laia Ferrer from 6-10pm on Dec. 24, 25, 31 and Jan. 1. Wine pairing is optional. After 10pm on each night, an after-party with live music and a DJ spinning tunes will continue until late.</p>

<p>LUZ Bangkok Tapas Bar’s Christmas Eve and Christmas Day four-course set menu kicks off with ‘refreshing cherry and tomato soup with olive oil caviar’, followed by ‘turbot with saffron sauce and asparagus’. After ‘cannelloni with truffle bechamel’, dessert is ‘traditional Spanish nougat made with nuts’.</p>
<p>The New Year’s Eve and New Year’s Day five-course menu begins with starters ‘zucchini pesto topped with truffle and flowers’, ‘creamy lobster croquette with caviar’, and ‘red prawn tartar with lemon gel and sea water’. ‘Aguachile with avocado grill, sweet corn and mango’, ‘turbot with saffron sauce and asparagus’, and ‘slow-cooked beef short ribs, truffle mash potatoes and homemade gravy’ are rounded out with ‘sparkling Spanish wine and chocolate’ for dessert.</p>
<p>By night the hotel’s Giang Swing Pool Bar, with a compelling contemporary interpretation of Bangkok’s Brahman structure and an expansive rooftop terrace dotted with outdoor lounges and sunbeds that evoke an Ibiza mood, becomes an upper-floor extension of the 33<sup>rd</sup> floor tapas bar. A spectacle unlike any other in Bangkok, tapas bar guests peer into the bottom of the hotel’s infinity pool.</p>
<p>With its soaring windows affording spectacular views, all-day dining restaurant The Kites Eatery will serve, under the stewardship of executive chef Katisak Pinkaew, a buffet dinner on Christmas Eve from 6-10pm and New Year’s Eve buffet from 6-11pm, as well as buffet brunches from 12-3pm on Christmas Day and New Year’s Day.</p>

<p>Revellers will farewell 2023 and count down the new year at the Giant Swing Bar for a night of rooftop fun and music from live DJs from 6pm on Dec. 31 until 1am on Jan. 1. A free-flow beverage package is on offer.</p>

<p style="text-align: left;" align="center"><b></b>INNSiDE by Meliá Bangkok Sukhumvit, the newest hotel to grace Bangkok’s skyline, is cementing its position as a cultural hub through a collaboration with Art Story by autistic Thai. The local social enterprise that highlights the work of autistic artists and the new hotel, with a mission to spark curiosity, launched “The Colors &amp; Texture of INNSiDE: Through My Eyes” this week. The limited-time exhibition is the result of a hands-on grand opening celebration “Meet Bangkok from the INNSiDE” that involved guests completing the artwork.</p>
<p style="text-align: left;" align="center"><span id="more-28972"></span>The art exhibition is open to hotel guests and the general public in the 32nd floor lobby until December 31st 2023.</p>
<p>The vibrant paintings are inspired by local Thai culture, traditions and each artists’ reflection and interpretation of questions posed to them while practicing their craft with Art Story.</p>
<p>“Just as our hotel has integrated with the fabric of this thriving city, the art on display will be integrated into our hotel&#8217;s atmosphere,” said the hotel’s general manager Aarron Nelson. “We want our guests to feel the harmony between being the observer and the architectural identity of the hotel.”</p>
<p>Of the ten pieces on display, three were completed at the grand opening event where guests were invited to lend a hand (and a brush) to create the final version. The seven pieces, completed by individual artists, are each distinct with paintings ranging from Buddha statues to elements of nature, such as flowers displayed on an altar and lion imagery in traditional Thai-style.</p>
<p>Under the umbrella of the Autistic Foundation, Art Story uses art as a therapeutic and inspirational tool to promote self-development of each individual artist and promote uniqueness as a strength. The foundation also strives for more inclusivity in society for exceptional individuals. INNSiDE by Melia Bangkok Sukhumvit will help raise funds for the foundation through the use of QR codes next to each piece of art. Visitors who wish to own the paintings or items inspired by the paintings can purchase directly through the codes with the money going straight to the foundation.</p>
<p>Reaching 34 floors, the INNSiDE by Meliá Bangkok Sukhumvit is Thailand’s first ‘INNSiDE by Meliá’ hotel and the fourth Meliá Hotels International property to debut in the kingdom.
