<p>Michelin-starred Chef Nicolas Isnard is chef and co-owner of Auberge de la Charme á Prenois restaurant, which was awarded a Michelin star within a year after opening, Chef Nicolas comes from the south of France and his grandparents were Italian, which much of his own sense of exciting tastes in a unique style both sincere and experimental. Chef Nicolas has also been awarded 4 toques by the Gault &amp; Millau guide and received the honored title of ‘Maitre Cuisinier de France’ in 2012.</p>
<p>Cooking is a “life-long passion” to Michelin-starred Nicolas Isnard. He loves his calling and the foods he works with, blending a sensitive knowledge of techniques with sheer passion to produce works of culinary art that linger deliciously on the palate, bringing to mind every dream of the azure Mediterranean and the richness of southern French cuisine.</p>

<p>Following a family tradition of cooking with natural and local products, Chef Thierry fell in love with the art watching his father preparing the family meal every Sunday morning. Soon enough, he began his own ambitious culinary career as Chef de Partie at the age of 21. Working alongside a number of renowned chefs, he set the highest standards possible for his cooking, eventually opening his own restaurant, the Thierry Drapeau Logis de la Chabotterie in Saint-Sulpice-le-Verdon, France. Chef Thierry has garnered universal recognition of excellence, holding a coveted two Michelin stars for the past eight years.</p>
<p>2-Michelin Star Chef Thierry Drapeau expresses his inspired talent in a style called “cuisine of the soil” for its authentic jus-based dishes with a highly concentrated taste using local produce from the soil and the sea nearby. In Chef Thierry’s cooking, only the highest quality produce is used and his dishes maintain a lightness, low in butter but high in flavour. Chef Thierry much prefers using flowers and herbs as opposed to spices for his exquisite cuisine</p>
<p>According to Chef Thierry, a dish must be worked on like a wine, taking time to look for “a balance combining herbaceous and floral notes; to work on the acidity, the bitterness and the sweetness”.</p>

<p><strong>About Thierry Drapeau</strong></p>
<p>2-Michelin Star Chef Thierry Drapeau is the chef and co-owner of the Thierry Drapeau Logis de Chabotterie restaurant in Saint-Sulpice-le-Verdon, in the Pays de la Loire region of France.</p>
<p>Originally from Nantes, Chef Thierry fell in love with the art of cooking as a boy while watching his father prepare the family meal every Sunday morning. He embarked on his own culinary career as Chef de Partie with Bateau Ivre at the age of 21. With a personality both modest and determined, he worked attentively alongside a number of renowned chefs, setting the highest standards possible for his own cooking.</p>
<p>Ever ambitious, Chef Thierry eventually opened his own restaurant, the Thierry Drapeau Logis de Chabotterie. Within a decade, in 2011, he received the prestigious recognition of two Michelin stars.</p>
<p>Chef Thierry Drapeau’s inspired style is called a “cuisine of the soil”, using local produce from the land and sea nearby and creating highly concentrated tastes. Only the highest quality produce is used. His authentic jus-based dishes are low in butter and so maintain a lightness with very distinct and rich flavours.</p>
<p>According to Chef Thierry, a dish must be worked on like a wine. The chef must take his time to discover a balance which combines herbaceous and floral notes, finding the perfect relationship between the acidity, the bitterness and the sweetness.</p>

<p>Alexandre Couillon is chef and owner of renowned La Marine restaurant in the small fishing village of L’Hermbaudiere, on Noirmoutier Island in the Vendée coast of France, and has earned numerous distinctions for his unique talent with seafood.</p>
<p>He has been awarded the coveted “Hope Trophee”, a recognition among young chefs deemed to best represent the future of French gastronomy, and in 2007 earned his first Michelin star. The following year, he was named the Grand Chef de Demain by respected critic Gault Millau. And for his incomparable cuisine, he achieved his second Michelin star in 2013!</p>
<p>Chef Alexandre has been called a superb “fish and seafood cook” due to his excellent handling of the changing catch of the day with stylish and complex recipes. <p><b style="line-height: 1.5;"></b>Bringing us the purest tastes of Southern France, Michelin-starred Chef Sébastian Sanjou, chef and owner of Le Relais des Moines restaurant visits La VIE – Creative French Cuisine restaurant in VIE Hotel Bangkok MGallery by Sofitel with marvellous lunches and dinners during 25<sup>th</sup> – 28<sup>th</sup> April.</p>
<p><span id="more-14121"></span>Descended from a family of restaurateurs in the Pyrenees, Chef Sébastian decided to follow in their footsteps early on. He is dedicated to perfection in his cooking, with a passion for tradition that is second nature to him.</p>
<p>After serving in the famous Chef Willer’s kitchen in Palme d’Or at Cannes as well as spending valuable time under Daniel Labarère, at last, in 2002, Chef Sébastien opened his own restaurant, Le Relais des Moines. The location was a fascinating old 16<sup>th</sup> century structure, a one-time canteen for monks as well as a sheepfold, in the heart of the Var area in the Provence-Alpes-Côte d&#8217;Azur region of Provence in Southeastern France. With his style quite traditional as well as extraordinarily light and delicious, recognition was soon to follow.</p>
<p>Chef Sébastien Sanjou was awarded a Michelin star in 2013, having been numbered among the outstanding Châteaux &amp; Hôtels Collection Tables in 2005. At the end of March 2014, Sébastien Sanjou was inducted as Maitre Cuisinier de France.</p>

<p><strong>About Sébastien Sanjou</strong><strong> </strong></p>
<p><span style="line-height: 1.5;">Inheriting a family tradition of restaurateurs, Chef Sébastien Sanjou comes originally from the village of La Mongie, situated at an altitude of 1,800 m on the French Pyrenees. With the inspiration of a childhood being surrounded with the practice of cooking, and the sheer beauty of the mountains, Sébastien Sanjou’s destiny to become a great chef was early decided on.</span></p>
<p>He followed his dreams with service in the famous Chef Willer’s kitchen in Palme d’Or at Cannes as well as spending valuable time under Daniel Labarère. He has become known for exceedingly delicious work with the vegetables of Southern France and has created a cuisine simultaneously very traditional as well as extraordinarily light and delicious.</p>

<p><b>About Chef Sylvain Sendra </b></p>
<p>Chef Sylvain Sendra: Hailing from acclaimed “food capital of the world” Lyon, in France. Sylvain completed his studies at Vatel Institute Culinary School and started his culinary career path at the famous <a href="http://www.google.co.th/url?sa=t&amp;rct=j&amp;q=&amp;esrc=s&amp;source=web&amp;cd=2&amp;cad=rja&amp;ved=0cguqfjab&amp;url=http%253a%252f%252fwww.hotelbyblossttropez.com%252f&amp;ei=g5xnub_ahirzrqetlodqdg&amp;usg=afqjcnhjq6s3lfpk1owtcu1rjb5wxcnuia&amp;bvm=bv.45175338,d.bmk">Hotel Byblos Saint-Tropez</a> in the south of France. His experience widened through working with 2-Michelin Star chef Jean Marc Delacourt who was honoured as Meilleur Ouvrier de France in 1991, at Château de La Chèvre d&#8217;Or (a castle turned hotel), under the Relais &amp; Châteaux luxury hotels group.</p>
<p>Sylvain then moved to London to work with Chef Alexis Gauthier (1-Michelin star) at Roussillon restaurant (Chef Alexis is the former chef of the famous 3-Michelin Star Chef Alain Ducasse&#8217;s restaurant Louis 15 in Monaco).</p>
<p>Back in Paris, he started a new trend with his &#8220;Parisian tapas&#8221; concept for an investor which was a huge business success. At age 24, he and his wife, Sarah, opened pocket-sized, 26-seat bistro, “Le Temps au Temps”, widely praised by the media. In May 2008, the Sendras, feeling the need to move further, opened Itinéraires with a focused menu incorporating unique culinary inspirations Sylvain acquired from his long-distance travels, such as to Japan and Peru, which has been described as offering “a great snap shot of the best of contemporary French bistro cooking”. Itinéraires achieved its first Michelin star in 2013 after four years of laudatory reviews from gourmets around the world, including a highly respectable mention in The New York Times and recently in Time Out Paris.</p>

<p>Growing up in France, Emmanuel had always had a strong affection for mountainous regions and wished someday to complement his cooking with their grand beauty. He took his first career step toward this goal, after training in Paris, at the restaurant of the Hôtel de Crillon under Christian Constant. He then joined Marc Veyrat at the Auberge de l&#8217;Eridan, and was second-in-command in its kitchens for seven years.</p>
<p>After a stay in London, Emmanuel at last based himself in the awe-inspiring mountains of Mégève in Haute-Savoie and, in 1998, founded his own restaurant, Flocons de Sel. There he has perfected his widely celebrated talent of transforming the natural and local ingredients of the Alps into the colourful, fragrant and succulent dishes that have earned such universal praise.</p>

<p><b>Michelin-Starred Chef Sylvain Sendra </b></p>
<p>Chef Sylvain Sendra: Hailing from acclaimed “food capital of the world” Lyon, in France, Sylvain completed his studies at Vatel Institute Culinary School and started his culinary career path at the famous <a href="http://www.google.co.th/url?sa=t&amp;rct=j&amp;q=&amp;esrc=s&amp;source=web&amp;cd=2&amp;cad=rja&amp;ved=0cguqfjab&amp;url=http%253a%252f%252fwww.hotelbyblossttropez.com%252f&amp;ei=g5xnub_ahirzrqetlodqdg&amp;usg=afqjcnhjq6s3lfpk1owtcu1rjb5wxcnuia&amp;bvm=bv.45175338,d.bmk">Hotel Byblos Saint-Tropez</a> in the south of France. His experience widened through working with 2-Michelin Star chef Jean Marc Delacourt who was honoured as Meilleur Ouvrier de France in 1991, at Château de La Chèvre d&#8217;Or (a castle turned hotel), under the Relais &amp; Châteaux luxury hotels group.</p>
<p>Sylvain then moved to London to work with Chef Alexis Gauthier (1-Michelin star) at Roussillon restaurant (Chef Alexis is the former chef of the famous 3-Michelin Star Chef Alain Ducasse&#8217;s restaurant Louis 15 in Monaco).</p>
<p>Back in Paris, he started a new trend with his &#8220;Parisian tapas&#8221; concept for an investor which was a huge business success. At age 24, he and his wife, Sarah, opened pocket-sized, 26-seat bistro, “Le Temps au Temps”, widely praised by the media. In May 2008, the Sendras, feeling the need to move further, opened Itinéraires with a focused menu incorporating unique culinary inspirations Sylvain acquired from his long-distance travels, such as to Japan and Peru, which has been described as offering “a great snap shot of the best of contemporary French bistro cooking”. Itinéraires achieved its first Michelin star in 2013 after four years of laudatory reviews from gourmets around the world, including a highly respectable mention in The New York Times and recently in Time Out Paris.</p>
