Phatrachot Dechapok  from Gaggan Anand Crowned Thailand’s Best Sommelier in French Wines 2020

The Thai edition of the Best Sommelier in French Wines competition took place recently with Khun Phatrachot Dechapok announced as 2020 champion.

Presented by the French Ministry of Agriculture, the competition rounded up 15 contenders for the semi-finals, of which only three candidates were selected to participate in the final showdown held on the same day.

The candidates, representing many of Thailand’s leading restaurants and hotels, were put through a series of rigorous workshops, from blind-tasting and wine pairing to professional pouring and preparing classic cocktails. Each workshop was designed to test their technical knowledge and showcase their ability to combine classic French wine service etiquette with personal modern Asian flair.

In order to take top honours, the candidates had to impress a nine-strong jury comprising a who’s who of French wine and hospitality experts. In the end, there could be only one winner and that was adjudged to be Khun Phatrachot Dechapok, of Gaggan Anand restaurant in Bangkok, who narrowly beat out the second-placed Khun Chatchai Thavontanakul, of Quaint in Bangkok, and third-placed Khun Sirayu Aupping of Keemala Resort in Phuket.

Winner Khun Phatrachot and first-placed runner-up Khun Chatchai will now go on to represent Thailand in the Asia regional competition to be held on November 25^th and December 15th. Competing for the coveted 2020 Asia title will be the top two sommeliers from eight Asian countries—Singapore, China, Hong Kong, Vietnam, Thailand, Taiwan, Macao and South Korea.

Held annually, the Best Sommelier in French Wines competition is a celebration of French wines and gastronomy — or, to put it another way, a celebration of the very essence of French life or “joie de vivre.”

Today, French wines enjoy an unprecedented global reputation, which is no small part down to the gifted and passionate sommeliers who challenge the industry and wineries by constantly reinventing the wine customer experience. This competition seeks to recognize these dedicated individuals.

กระทรวงเกษตรของฝรั่งเศสเป็นแม่งานในการจัดการแข่งขันซอมเมอลิเยร์ไวน์ฝรั่งเศส โดยรอบรองชนะเลิศมีผู้เข้าแข่งขัน 15 ท่าน และได้คัดผู้เข้าแข่งขันเพียง 3 ท่านเเข้าสู่การแข่งขันรอบชิงชนะเลิศที่ถูกจัดขึ้นในวันเดียวกัน

ผู้เข้าแข่งขันซึ่งเป็นตัวแทนจากร้านอาหารและโรงแรมชั้นนำของประเทศไทย ได้ผ่านการทดสอบเชิงปฏิบัติ ตั้งแต่การชิมแบบปิดฉลากขวด หรือปิดตาชิม การจับคู่ไวน์ ไปจนถึงการรินไวน์อย่างมืออาชีพ การเลือกแก้วไวน์ และการเตรียมค็อกเทลแบบคลาสสิก การทดสอบเชิงปฏิบัติแต่ละหัวข้อได้รับการออกแบบมาเพื่อทดสอบความรู้ทางเทคนิค และเพื่อให้ผู้เข้าแข่งขันได้แสดงความสามารถในการผสมผสานมารยาทในการให้บริการไวน์ฝรั่งเศสแบบคลาสสิก ด้วยไหวพริบแบบเอเชียสมัยใหม่

ผู้เข้าแข่งขันจะต้องสร้างความประทับใจให้กับคณะกรรมการทั้ง 9 คน ซึ่งประกอบไปด้วยกูรูไวน์ฝรั่งเศส และผู้เชี่ยวชาญด้านการบริการในสายต่างๆ ซึ่งผู้ที่ถูกตัดสินให้เป็นผู้ชนะได้แก่ คุณภัทราโชติ เดชะปก จากร้านอาหาร Gaggan Anand ในกรุงเทพฯ ที่เอาชนะอันดับสองคือ คุณฉัตรชัย ถาวรธนากุล จากร้าน Quaint ในกรุงเทพฯ และอันดับสาม – คุณศิรายุ อุปปิง จาก Keemala Resort ในภูเก็ต

ผู้ชนะเลิศ – คุณภัทราโชติ และ รองอันดับ 1 คุณฉัตรชัย จะเป็นตัวแทนประเทศไทยในการแข่งขันระดับภูมิภาคเอเชีย ที่จะจัดขึ้นในวันที่ 25 พฤศจิกายน และ 15 ธันวาคมนี้ การแข่งขันเพื่อชิงตำแหน่งแชมป์เอเชียในปี 2020 จะรวมผู้แข่งจาก 8 ประเทศในเอเชีย ได้แก่ สิงคโปร์ จีน ฮ่องกง เวียดนาม ไทย ไต้หวัน มาเก๊า และเกาหลีใต้

การแข่งขันซอมเมอลิเยร์ไวน์ฝรั่งเศสจัดขึ้นเป็นประจำทุกปี เพื่อเป็นการเฉลิมฉลองไวน์ฝรั่งเศส หรือกล่าวอีกนัยหนึ่ง คือการเฉลิมฉลองแก่นแท้ของวิถีชีวิตแบบฝรั่งเศสหรือ  “joie de vivre”

ปัจจุบันไวน์ฝรั่งเศสมีชื่อเสียงระดับโลก ซึ่งส่วนหนึ่งของชื่อเสียง และความไว้วางใจต่อไวน์ฝรั่งเศสที่ได้รับนั้น ได้มาจากเหล่าซอมเมอลิเยร์ที่มีพรสวรรค์และหลงใหลในไวน์ ซึ่งท้าทายอุตสาหกรรม และโรงบ่มไวน์ ด้วยการคิดค้นประสบการณ์ใหม่ๆให้ลูกค้าไวน์อย่างต่อเนื่อง โดยการแข่งขันนี้จัดขึ้นเพื่อยกย่องบุคคลที่อุทิศตนเหล่านี้

French Pâtissier Rodolphe Landemaine at Pullman Bangkok Hotel G

Pullman Bangkok Hotel G is excited to welcome special guest Chef pâtissier, Rodolphe Landemaine from Paris during 21^st – 26^th May.

Rodolphe Landemaine is the creative culinary tour de force behind Maison Landemaine bakeries in Paris and Tokyo. The gifted pâtissier will revitalize the bakery menu of Playground Café in the lobby as well as creating new burger buns and a dessert menu at 25 Degrees Burgers Bar Bangkok.

Born in Mayenne, France, Rodolphe Landemaine began his career at CEPROC (Centre Européen des Professions Culinaires) in the 19^th district of Paris before going on to perfect the art of baking and pastry at Compagnons du Devoir in Paris, Brussels and Reims. He also honed his craft working alongside Paul Bocuse in Lyon, at the gourmet restaurant Lucas Carton, the delicatessen Raynier-Marchetti, and more. After working alongside such skilled artisans, he was inspired to open his own bakery, Maison Landemaine. It is there that he also met his then wife to-be, Yoshimi Ishikawa. Together, they went on to transform Maison Landemaine into a contemporary and sustainable French-Japanese bakery renowned for high quality breads, signature pastries and Viennoiseries, all freshly made in-house from the finest sustainable ingredients. Today, Maison Landemaine has 15 outlets in Paris, one in Lille and École Levain d’Antan, a bakery and training centre in the heart of Tokyo.

In May at Playground Café, Chef Rodolphe will create a new menu featuring two-colour croissants, lemon meringue croissants, matcha rolls, muffins, pain au cacao, and much more. At 25 Degrees Burgers Bar, the renowned chef will create brand new burger buns for today’s health-conscious diners which are low carb, gluten free and light brioche, along with new delectable items such as ham and cheese croissants and the Americano – mini baguettes with sausage and fries.

During 9^th – 24^th May 2016, France’s official Cheese Ambassador to the world, Gérard Poulard, once again returns to Scarlett Wine Bar & Restaurant on the 37^th floor of Pullman Bangkok Hotel G. Back by popular demand, the cheese master will present his 2016 Collection of Fromages de France, bringing with him 100 varieties of French farmed cheese from the best of France’s boutique producers — available at Scarlett only!

Since 1999, Gérard Poulard has become internationally renowned as the world’s expert in the enjoyment and presentation of the fine cheeses sought after by gourmet dining restaurants in over 22 countries around the world. In collaboration with his son Olivier, he has received an ever increasing list of prestigious awards for his knowledge regarding France’s most delectable exports, including The Order of Agricultural Merit, Le Cordon Bleu France, and the Prosper Montagné from Quality House.

For more than two decades, the Cheese Master has travelled throughout the French countryside discovering its varied history and culture concerning his favorite topic, cheese. In fact his knowledge about the farms of France is so extensive that sometimes he even knows the name of the goat or cow from which the milk has been drawn.

Behind the cheeseboard, Gérard Poulard impresses and arouses the desire of those who meet him, speaking about the unique flavors of various cheeses with passion and a fantastic level of knowledge. While a guest looks at the cheeseboard, he carefully asks about his cheese palate, ultimately selecting the tailor-perfect cheese for each guest.

He will present a plethora of excellent cheeses, such as Couronne Lochoise, Le compostelle, L’olivet foin, Taupinette Jousseaume, Rigotte de Condrieux and more.

Also presented will be a divine selection of goat cheeses from France. Although slightly less known, goat cheese makes up an exquisite variety of cheese that possess numerous health benefits, including being substantially lower in fat and calories. Goat cheese is also higher in protein and calcium, as well being a good brain food that boosts metabolism and has heart beneficial properties along with other nutrients.
