<p><span id="more-31829"></span>The iconic 96-year-old luxury hotel invites diners in Phnom Penh to experience a taste of Chef Jerome’s culinary mastery, in meals served at Restaurant Le Royal spotlighting some of his most extraordinary dishes honed in Montceau-les-Mines, Burgundy. Chef Jerome formerly trained with gastronomy legends Alain Ducasse (in Joël Robuchon’s former restaurant) and Georges Blanc before opening his own eponymous restaurant, which has earned tremendous acclaim.</p>
<p>The exclusive 5-course set dinner, served from 6:30pm to 9:30pm, will be priced at $88++, while the delectable 3-course set lunch, served from 12 noon to 3pm, will be priced at $38++. Wine pairing options are available starting from $32++. Chef Jerome’s exceptional 5-course Valentine’s Day dinner inclusive of a welcome glass of Champagne promises the ultimate in romantic fine dining, priced at $108++.</p>

<p>PHNOM PENH, Cambodia – Raffles Hotel Le Royal, the luxury heritage hotel in Cambodia’s capital, will welcome acclaimed French Chef Stephane Carrade of the 2-Michelin-star Le Skiff Club for a series of exclusive meals later this month.</p>
<p><span id="more-30314"></span>Chef Stephane, whom the MICHELIN Guide describes as a “talented and skilled captain … who combines generosity and finesse,” will serve distinctive dinner and lunch sets at the hotel’s signature fine dining outlet, Restaurant Le Royal, on May 29, 30 and 31. The meals feature an exclusive partnership with Louis XIII, the luxury cognac.</p>
<p>The dinner, served from 6:30 p.m. until 9:30 p.m., is priced at $98++, while the lunch, served from 12 p.m. until 3 p.m., is priced at $48++, with optional wine pairings and special Louis XIII tasting. Advance reservations are recommended.</p>
<p>“Our hotel guests and local residents in Phnom Penh increasingly look to Raffles Hotel Le Royal for some of Cambodia’s most extraordinary fine dining experiences. Chef Stephane, with his two Michelin stars, promises to immerse gourmet diners in an exceptional world of refined flavours,” Raffles Hotel Le Royal General Manager Dennis de Groot said.</p>
<p>MICHELIN praises Le Skiff Club’s “delightful ‘progressive terroir’ cuisine,” calling it “a superb celebration of the Aquitaine region of southwest France.” The restaurant is located in a 1930s Basque hotel that was redesigned by Philippe Starck. Chef Stephane is renowned for working with small regional producers to source the highest-quality local fish, herbs and meats, as well as the finest produce.</p>

<p><span id="more-29989"></span>The iconic luxury hotel will offer special set dinners and lunches featuring Chef Nicolas’ culinary creations on April 24, 25 and 26, as it continues to elevate fine dining in the Cambodian capital.</p>
<p>Born in the south of France, Chef Nicolas brings Gallic sensibilities to his inventive cuisine while drawing on a gastronomic journey that has taken him around the world. He has served in acclaimed French restaurants Auberge du Vieux Puits (today 3 Michelin stars), La Rotonde (2 Michelin stars) and Le Vieux Logis (1 Michelin star), among others, and he has prepared celebrated meals in Dubai, Beijing, Moscow, Singapore, Macao, Casablanca and elsewhere.</p>
<p>At Raffles Hotel Le Royal’s signature fine-dining venue Restaurant Le Royal, Chef Nicolas will serve two exclusive dining options daily, including a sumptuous dinner set (priced at $92++) and a lunch set (priced at $42++), with optional wine pairings in addition to a special Louis XIII tasting. Dinner will be served between 6:30pm and 9:30pm, and lunch between 12pm and 3pm.</p>

<p>The restaurant’s new menu continues to spotlight authentic Royal Khmer cuisine alongside modern Khmer gastronomy whose offerings will be updated monthly. Restaurant Le Royal’s elegant and sophisticated interior features beautiful original artwork amid gleaming white walls and a bank of arched windows overlooking a lush courtyard.</p>
<p>For its reopening, the Royal Khmer menu at Restaurant Le Royal includes the following dishes, among others: <b>Nhoam Svay</b>(green mango salad with grilled prawns, Nuoc Mam sauce and peanuts); <b>Phlea Trey Tonle</b> (marinated bar fish cured with lime, lemongrass and a homemade spice mixture); <b>Kd’arm Trung Kroeung Stuffed Crab</b> (crab shell, coriander root, dried chili and fresh herbs); <b>Takeo River Lobster Amok</b> (served in young coconut with steamed rice); and for dessert <b>Chek Chhoeng Skar</b> (pan-fried caramelized banana with orange sauce) and <b>Num Khmer Bai Mouk</b> (a trio of Khmer sweets: sticky rice, taro cake and sweet potato).</p>
