<p><span id="more-28429"></span>This October, Scarlett presents an elegant and indulgent menu with some of France’s finest fromages from the renowned Les Frères Marchand, established since 1880.</p>
<p>From starters to dessert, experience 7 different cheeses, each highlighted in a dish that best brings out their unique notes and textures, starting from THB 390++ per dish.</p>
<p><strong>A Series Of Dairy Cheese </strong></p>
<p>Bridging the line between freshness and delightful funk, the unique <b>Bleu de Cire</b> brings its incredibly creamy, melt-in-the-mouth texture to a fresh, perfectly balanced salad composed of endive, radicchio, fresh pear, and hazelnuts.</p>
<p>The <b>Summer Beaufort</b> cheese, distinguished by its complex combination of meaty, caramel-like, floral, and buttery flavours, can be best enjoyed with a cloud of mousse, autumn vegetables, and a bouquet of herbs, presented on a delicate filo puff pastry.</p>

<p>From the Loire Valley to the heart of Bangkok, the <b>Crottin de Chavignol</b> is a goat’s cheese bursting with bold, full flavour with a delightful nuttiness. This explosion of umami is aptly curated into the form of <i>crosmesquis</i>, an iteration of French croquette that gets served alongside a refreshing purple artichoke salad and aromatic rosemary cream.</p>
<p>Classic cheeses also take the stage, including <b>Camembert </b>and <b>Reblochon</b>. The former is prepared <i>au four</i>, baked to melty perfection, then sweetened with apples and flambéed with calvados. The <b>Reblochon</b> stars in a decadent <i>tartiflette</i>, with potatoes and lardons.</p>

<p>End the dinner on a sweet and savoury note with <b>Fresh Goat’s Cheese</b> for dessert, lightened with sweet Chantilly, pavlova, and vibrant red berries.</p>
<p><strong>Aged To Perfection</strong></p>
<p>Five French wines will also be introduced to pair with the A Fromage Fantasy menu. Lighter cheese can be enjoyed with <b>Louis Michel &amp; Fils Chablis 2021</b>, <b>Domaine Zind Humbrecht, Gewurztraimer, Alsace 2020</b>, or a crisp <b>Domaine Vacheron, Sancerre 2022</b>.</p>
<p>On the other hand, dishes with bolder personalities are best to mingle with the <b>Château Puy Blanquet, St. Emilion 2015</b>. For something in between, the <b>Henriot Rosé Champagne NV</b> brings a refreshing, floral sweetness with an exciting effervescence.</p>
