Tasting The Prestigious Almaviva at The Wine Merchant 

โปรแกรมบ่ายวันนี้  สุขใจกับการกับชิม  Almaviva  ไวน์ชิลีอันดับท็อปของโลก  ไวน์ตัวนี้ดังมาก  ด้วยเป็นการร่วมมือกันระหว่าง Baron Philippe de Rothschild (Chateau  Mouton Rothschild) ผู้ผลิตไวน์ยิ่งใหญ่ของฝรั่งเศส และ Concha y Toro แห่งชิลี  ก่อตั้งขึ้นในปี 1997  โดยงานนี้  Mr. Felipe  Feliu ตัวแทนไร่บินมาบรรยายไวน์ด้วยตัวเอง

Mouton Rothschild  ชื่อนี้วงการไวน์ไม่มีใครไม่รู้จัก  เป็นไวน์ระดับ Grand cru  1 ใน  5 อรหันต์ ของ Bordeaux  ด้วยการจัดอันดับที่รู้จักกันในชื่อ 1855 Classification  ที่พระเจ้านโปเลียนที่ 3  มีดำริให้จัดทำขึ้น ในเขต Médoc  (เมด็อก)  ซึ่งเป็นเขตไวน์แดงของแคว้น Bordeuax  มีการจัดลำดับไวน์เป็น 5  ชั้น (First to Fifth Growth)  โดย Mouton Rothschild เป็น 1 ใน 5 ไวน์ที่ติดอันดับ 1 หรือ first growth  (ทั้งนี้ไวน์แดงที่ได้รับการคัดเลือกมีทั้งหมด 61 label)

การจัดอันดับนี้บ้างก็ว่าอยู่ที่ quality ของไวน์ ด้วยช่วงนั้นบอร์โดซ์ค้าขายไวน์กับอังกฤษโดยตรง และเจริญรุ่งเรืองมาก  บ้างก็ว่าขึ้นอยู่กับราคา  แต่ก็มีที่ว่าคัดเลือกจาก terroir   ซึ่งก็เป็นไปได้ว่ารวม ๆ กันไป  ส่วนที่แน่ใจได้กว่า  คือ  เพื่อนที่นั่น บอกว่า ไวน์บอร์โดซ์ เป็นไวน์ hi-so  ซึ่งดูความโก้เก๋ หรูหราแล้ว ก็น่าจะจริงของเธอ

Concha y Toro (กอนชา อี โตโร) เป็นผู้ผลิตไวน์ที่มีชื่อเสียงเก่าแก่ของชิลี ก่อตั้งขึ้นในปี 1883 มีชื่อเสียงโด่งดังในลาตินอเมริกา  โดยผู้ก่อตั้งหลงไหลในไวน์บอร์โดซ์  จึงต้องการทำไวน์คุณภาพสูงในชิลี ด้วยการนำเทคนิคการผลิตไวน์แบบฝรั่งเศสมาพัฒนา

การก่อกำเนิดขึ้นของ Almaviva เป็นการนำ know how  ศาสตร์และศิลป์ ในการทำไวน์ ของผู้ผลิตที่ได้ชื่อว่าเป็นเลิศที่สุดในโลกของฝรั่งเศส  มาผสานกับ terrior  ดิน ฟ้า และ อากาศ เฉพาะถิ่นของชิลี  โดยชื่อ Almaviva  ดึงมาจากตัวละครใน The Marriage of Figaro (1778) ของนักเขียนฝรั่งเศส Beaumarchais (โบมาร์แช) ซึ่ง ต่อมา Mozart  นำมาประพันธ์เป็น opera

การทำไวน์เป็นสไตล์บอร์โดซ์   องุ่น เป็น Bordeaux blends ที่เลื่องชื่อ ผสาน  Cabernet Sauvignon (คาแบร์เนต์ โซวีญง) ที่ให้บอดี้และความเข้มข้น Carménère (คาเมแนร์)  องุ่นที่เคยปลูกมากในฝรั่งเศส  ใช้แทนพันธ์ Merlot ของบอร์โดซ์  ตัวนี้ให้ความนุ่มนวล แต่จะ  spicy  กว่า Merlot และอีกสองตัวคือ Cabernet Franc  และ  Petit Verdot

การชิมไวน์วันนี้เป็น Vertical tasting  คือ ไวน์ชนิดเดียวกันแต่ต่างปี เพื่อสัมผัสรสชาติที่ต่างกันตามสภาพอากาศและการบ่มไวน์ของแต่ละปี

ไวน์ Almaviva นี้เคยชิมมาหลายครั้ง  ประมาณแค่ดม ๆ  วันนี้  ดีใจ  The Wine Merchant จัดเต็ม  มีทั้งหมด 5 ตัว เคียงอร่อยกับ canape ของกินเล่น เช่น cold cuts ชีส และสตู

ตัวแรก Epu 2022 เป็น  second label  รสชาติออกแนว fruity  กว่า Almaviva  ใช้องุ่นจากต้นที่อ่อนกว่า   ใช้เวลาบ่มโอ๊คสั้นกว่า และใช้ used barrel  เพื่อไม่ให้โอ๊ค  overpower

Almaviva 2022  และ  Almaviva 2020  

Felipe อธิบายว่า ไวน์  2 ตัวนี้ profile ประมาณเดียวกัน  เป็น dry vintage เหมือนกัน แต่ปี  2022  อากาศจะเย็นกว่าหน่อย  ผลผลิตน้อย  ไวน์รสชาติเข้มข้น

Almaviva 2022  ได้รสชาติองุ่นสุกจัด แต่ยังมี freshness เป็นปีที่อุณหภูมิกลางวันและกลางคืนขึ้นลงต่างกันมาก  ซึ่งเป็นผลดีต่อการค่อย ๆ สุกขององุ่น  น้ำตาลไม่สูงเกิน และได้ acidity  ที่ดี

Almaviva 2020  จะประมาณเดียวกัน  อุณหภูมิจะสูงกว่าหน่อย  ไวน์จึง full body  กว่า

Almaviva  2012  แม้เป็น  warm vintage แต่ไวน์ acidity สดใส และ well balanced

Almaviva 2008  ตัวนี้คาแรคเตอร์จะค่อนข้างต่างกว่าตัวอื่น  เป็นปีที่ฤดูหนาว  หนาวจัด  ส่วนหน้าร้อน ร้อนจัด  แต่เป็น dry vintage จึงได้ nice concentration มีทั้ง finesse  และ elegance ความที่เป็นไวน์ age รสชาติจึงมีความซับซ้อนกว่า  เริ่มมีกลิ่นพวกหนังสัตว์  จากการบ่มที่ดี แทนที่ red  หรือ black fruits ในไวน์ที่อายุอ่อนกว่า

ไวน์ดีทั้ง 5 ตัว มี 2 ตัวที่ชอบมาก แต่ขอไม่เฉลย  ใครสนใจไปชิมกันเองนะคะ  ที่นี่นอกจากไวน์ดี อาหารอร่อย ร้านยังสวยมาก  ถ่ายรูปดีเลย

Note: ในการจัดอันดับ 1855 Classification  ชาโต้ Mouton Rothschild ถูกจัดอยู่ในระดับ Second Growth  ต่อมา ในปี 1973 ได้รับการเลื่อนชั้นเป็น First Growth  ถือเป็นการเปลี่ยนแปลงเพียงครั้งเดียวในประวัติศาสตร์  เพราะ อันดับของ 1855 Classification นั้น เปลี่ยนแปลงไม่ได้

In addition to offering a carefully curated selection of fine wines from around the world, ‘Beccheria at The Wine Merchant by Maurizio Menconi’, located within TWM Silom shop, is an exciting new culinary concept promises to enchant the guests with a thoughtfully curated array of small plates and artisanal charcuterie and cheeses, crafted by micro-producers.

What is a “Beccheria”?

‘Beccheria’, a synonym for ‘butcher’s shop’ – the term which originates from the Latin word “macellum,” meaning meat market.

‘Beccheria’, which comes from “becco,” an Italian word for goat; and “beccaio” which refers to the person who works inside the shop. Beccherias specialize in selling various meats like steak, sausages, ham and chicken, sometimes expanding to offer products like fresh eggs.

The culinary concept of ‘Beccheria at The Wine Merchant by Maurizio Menconi’ is to work with meat, fish and transform the ingredients as Beccaio/Butcher used to do in the olden times.

“Here, guests are invited to indulge in the exquisite selection of family recipes, including pâte, rillettes, and terrines, ideal for savoring in our shop or for take-away pleasure,” says Chef Maurizio Menconi, who will be bringing flavors and traditions from his hometown in Florence, back in the 13^th Century, to The Wine Merchant’s dining room.

Born near Florence, Chef Maurizio is an inspirational talker on the subject of his cuisine…his vast experience includes his stints at The Sukhothai Bangkok as Head Chef position. Maurizio has also been working shoulder to shoulder with numerous Michelin-Star Chefs, to name a few; 3 Michelin Stars – Alan Passard “L’Arpege” Paris – Pascal Barbot “L’Astrance” Paris, Massimo Bottura “Osteria Francescana” in Modena, Italy, 2 Michelin Stars Gaetano Trovato from “Arnolfo” in Siena, Italy, Koji Shimomura “Edition” in Tokyo, Cloude Bosi “Bibendum” in London and Alex Atala from D.O.M. in Sao Paulo de Brazil.

In 2018 Maurizio opened his first restaurant in Thailand, “White Lies” by Maurizio Menconi – with a Michelin recognition after just 10 months and was named the Best Italian Restaurant in Thailand for the Year 2020 accolade by Thailand Tatler.
