ชิมไวน์มื้อนี้ ชวนเที่ยว Roussillon (รูซียง) แคว้นแดนใต้สุดของฝรั่งเศส เป็น estate เล็ก ๆ ชื่อ Domaine De Baronarques (โดเมน เดอ บาโรนาร์ค) หนึ่งในอาณาจักรของผู้ผลิตไวน์ยิ่งใหญ่ Baron Philippe de Rothschild

ชื่อนี้ในวงการไวน์ไม่มีใครไม่รู้จัก เป็นเจ้าของ Château Mouton Rothschild ไวน์ grand cru 1ใน 5 เสือ ที่ได้รับชั้น First Growth จากการจัดอันดับไวน์ยิ่งใหญ่ที่สุดของโลก 1855 Bordeaux Classification

ไวน์เด่นดังในอาณาจักรยังรวม ขวัญใจคอไวน์ไทย Château Clerc Milon และ Château d’ Armailhac เป็น grand cru classé ชั้น Fifth Growth จากตำบล โปอิยัค (Pauillac) ทั้งสองตัว

ส่วนนอกประเทศฝรั่งเศสก็ Opus One ที่ Baron Philippe จับมือกับ Robert Mondavi แห่ง Napa Valley และ Almaviva ที่ร่วมมือกับ Concha y Toro (กอนชา อี โตโร) แห่งชิลี ผลิตไวน์ชื่อเสียงเลื่องลือในสไตล์บอร์โดซ์ทั้งสองแห่ง

สำหรับ Baronarques จะฉีกจากแนวบอร์โดซ์ของรุ่นใหญ่ ตั้งอยู่ในแคว้น Roussillon ทางภาคใต้ของฝรั่งเศส ติดชายแดนเสปนและทะเลเมดิเตอร์เรเนียน ขณะที่ Bordeaux อยู่ทางตะวันตกเฉียงใต้ และอยู่ฝั่งมหาสมุทรแอตแลนติก

จากเมือง การ์กาซอน (Carcassonne) ขับรถ ผ่านป่าเขาลำเนาไพรมาไม่ถึงครึ่งชั่วโมงจะมาโผล่ที่ Baronarques ประมาณ in the middle of nowhere ท่ามกลางป่า ขุนเขา และธรรมชาติที่สวยงาม สะพรั่งด้วยดอกไม้ ผลไม้ เชอรี่ และทรัฟเฟิล ที่พูดนี่ยังไม่เคยไปหรอก แต่ฟังจาก MD ที่มาพรีเซนต์ไวน์เล่าแล้วอยากไปเยือน

ย้อนกลับไปที่ Carcassonne ขอพูดถึงสักหน่อย บอกแล้วว่าจะพาเที่ยว เมืองนี้ชื่อเสียงโด่งดังมาก ได้รับการขึ้นทะเบียนเป็นมรดกโลกของ UNESCO เป็นเมืองประวัติศาสตร์ มีป้อมปราการจากยุคกลางที่มีชื่อเสียงที่สุดในภาคใต้ของฝรั่งเศส จุดเด่นคือกำแพงเมืองคู่และหอคอยจำนวนมากที่รักษาไว้อย่างดีเยี่ยม ป้อมนี้เคยไปเดินมาแล้ว ใหญ่โต เดินจนเมื่อย สวยโบราณแบบยุคอัศวิน ยังจำได้ว่านักท่องเที่ยวตรึม

Baronarques เป็นไวเนอรี่เก่าแก่ในเขต Limoux (ลิมูซ์) appellation ย้อนกลับไปได้ถึงศตวรรษที่ 17 โดย Baroness Philippine de Rothschild (ธิดาของ Baron Philippe) มาเที่ยวแถวนี้บ่อย เกิดหลงรักแดนใต้ จึงซื้อที่นี่ไว้ในปี 1998 บูรณะซ่อมแซมจนสวยงาม และพัฒนาจนเป็นไร่อันดับหนึ่ง สมศักศรีดิ์หนึ่งในตระกูล Rothschild ปัจจุบันดูแลโดยลูก ๆ 3 คน คือ Philippe, Julien และ Camille

มาถึงไวน์ วันนี้เป็นการเปิดตัว Baronarques ครั้งแรกในไทย ที่ห้องอาหาร Bistrot de la Mer โรงแรม Sindhorn Kempinski เป็นการจับมือกันของ TOPS WINE CELLAR กับ Domaine De Baronarquesโดย Augustin Deschamps (โอกุสแตง เดส์ฌอง) ตำแหน่ง MD บินมาร่วมงาน

มื้อกลางวัน เบา ๆ ไวน์แค่ 3 ตัว

เริ่มจาก ไวน์ขาว Domaine De Baronarques Blanc 2021 ผสานสายพันธ์ Chardonnay 95 % เพื่อเชิดชูสายพันธ์ดังของท้องถิ่น และ Chenin Blanc 5% เพื่อตอกย้ำความเป็นแดนใต้ อันที่จริงก็เพิ่งจะรู้ว่านะว่า ชาร์ดอนเน่ อยู่ใน AOC ของ Limoux ด้วย (ปรกติองุ่นขาวหลักของทางใต้ คือ Grenache Blanc ส่วน Chardonnay จะเป็นสายพันธ์หลักของ Burgundy ที่อยู่ทางเหนือ) คือได้ความรู้ใหม่

ไว์บ่มในถังโอ๊คจากเบอร์กันดี ใช้ถังใหม่แค่ 25 % เพื่อไม่ให้ไวน์ oaky จนเกินไป 2 สายพันธ์ผสานกันได้ดี หอมกลิ่นมะนาว มีความ buttery ซับซ้อน เข้าคู่ชื่นมื่นกับ Hay-Smoked Scottish Mackerel, Pickled Lemon, Baby Potato, Watercress, Anchovy Relish

มาถึงไวน์แดงความท้าทายคือ การผลิตไวน์แดงในดินแดนที่ได้ชื่อว่าเป็นถิ่นของไวน์ขาวและ ไวน์ฟอง (sparkling wine) ที่มีชื่อเช่น Blanquette de Limoux และ Crémant de Limoux แต่ด้วยสภาวะการเปลี่ยนแปลงของภูมิอากาศ ทำให้ Baronness Philippine มองการไกล เห็นศักยภาพของไวน์แดง

ตัวแรก La Capitelle De Baronarques Rouge 2022 ผสาน Merlot, Syrah และ Malbec ปี 2022 เป็นปีดี sunny vintage ตัวนี้ถือว่ายังเด็ก เก็บได้อีกหลายปี ใช้ Syrah เพื่อให้ได้เสน่ห์และความ spice ของแดนใต้ เป็นไวน์ดื่มง่าย สไตล์สบาย ๆ เหมาะกับอาหารหลากหลาย.และในทุกโอกาส

ตัวที่สอง Domaine De Baronarques Rouge 2020 เป็น expression ของ องุ่น 5 สายพันธ์ คือ Merlot, Cabernet Franc, Syrah, Malbec & Cabernet Sauvignon มองดูแล้วไม่ใช่องุ่น South of France สักเท่าไหร่ (ยกเว้น Syrah) คุณโอกุสแตง บอกว่า นั่นเพราะต้องการทำไวน์ที่มาจากทั้ง 2 ด้านของไวเนอรี่ เป็นไวน์ 2 สไตล์ ด้านหนึ่งคือเมดิเตอร์เรเนียน คือ La Capitelle ไวน์แดงตัวแรก และอีกด้านคือ แอตแลนติก ซึ่งก็คือ Domaine De Baronarques Rouge

ตัวนี้ปี 2020 กลิ่นและรสชาติออกแนวผลไม้สีแดง มี finesse, elegant แทนนินนุ่มไม่เข้มเกิน

แพร์กับไวน์แดงคือ 48-Hour Braised Beef Chuck, Confit Shallots, Oyster Mushrooms, Mashed Potato, Barolo Jus เนื้อตุ๋นอร่อยมาก ยิ่งกินยิ่งมัน กินไปดื่มไป เนื้อกับไวน์เข้ากันดี๊ดีเป็นปี่เป็นขลุ่ยทีเดียวเชียว

TOPS WINE CELLAR, Thailand’s premier wine retailer, under central retail, today announced its exclusive partnership with Domaine de Baronarques, a distinguished wine estate from the legendary Baron Philippe de Rothschild group of wineries. The official launch was celebrated with an intimate press lunch at the acclaimed Bistrot de la Mer, Sindhorn Kempinski Hotel Bangkok, marking the first time that the full line-up of these celebrated wines is available in Thailand.

Domaine de Baronarques is widely considered one of the top wineries in Roussillon with a history that can be traced back to the 17th century. Since 1998, it has been owned by the Rothschild family under the Baron Philippe de Rothschild family of wineries, which includes other notable wineries such as Mouton-Rothschild, Chateau Clerc Milon, Chateau d’Armailhac and more. The winery has since the acquisition seen a significant investment in the vineyards and cellars, enabling the winery to strengthen its position as a benchmark for the Roussillon appellation. Domaine de Baronarques is famous for producing wines of freshness and elegance, while still maintaining the power and structure that the Roussillon region is famous for.

To commemorate the launch, TOPS WINE CELLAR hosted an exclusive event which was hosted by Mr. Augustin Deschamps, Managing Director of Domaine de Baronarques together with Mr. Rasmus Poll, Head of Alcohol & Tobacco of Central Food Retail under Central Retail.

The guests were treated to three different wines of Domaine de Baronarques, including the two top wines of the winery, Domaine de Baronarques Rouge and Blanc as well as La Capitelle, a wine that is exclusive to TOPS WINE CELLAR in the Thai market.

Mr. Augustin Deschamps explained the wines in depth to the invited guests along with the long, illustrious history of the winery and the fascinating wine region of Roussillon, with Mr. Rasmus Poll adding insight into the partnership between TOPS WINE CELLAR and the Baron de Philippe Rothschild group of wineries.
