<p>UNO MAS restaurant at Centara Grand at Centralworld invites diners to its exclusive Basque Grill pop-up on the Dining Deck. This unique culinary adventure, only available until February 2024, is curated by Chef Roberto Gonzales Alonso and immerses guests in the authentic flavours of the Basque region.</p>
<p><span id="more-29619"></span>At the heart of the Basque Grill experience is a menu that boasts an array of robust and heartwarming dishes, all cooked over an open flame. Diners can look forward to the El Capricho Chuleton, a steak known for its rich flavours. Adding to it is the Txogitxu Txistorra sausages, offering a unique taste of the region’s country traditions. Not to be missed is the whole charred turbot, a delicacy that perfectly encapsulates the essence of Basque cuisine.</p>

<p>This November, UNO MAS restaurant is excited to welcome back Chef Fernando P. Arellano of the highly acclaimed, Michelin star “Zaranda” restaurant in Mallorca, Spain.</p>
<p><span id="more-25518"></span>For two days only, this award-winning chef will be hosting a specially curated tasting menu at Bangkok’s 54th-floor UNO MAS restaurant — known for its blend of both authentic and creative Spanish and Mediterranean cuisine.</p>

<p>Chef Fernando P. Arellano will be with us in Bangkok on the <b>25th and 26th of November 2022. </b></p>
<p>Fernando Pérez Arellano (Madrid 1978) developed most of his experience working in different countries where, in addition to the achievement of cooking skills, he developed his language abilities.</p>
<p>Having trained in some of Europe’s best restaurants he gained the experience required to take on his own restaurant.</p>
<p>In September 2005, he opened Zaranda, a tiny modest restaurant in Madrid.</p>
<p>After 11 months being open, Zaranda received its first star in the Michelin Guide and later, was also awarded two rosettes in the Repsol Guide.</p>
<p>Five years later, Zaranda and all his team faced a new challenge moving their project to Mallorca.</p>
<p>In November 2015, he received his second Michelin Star after 10 years from its opening. During the last years, Zaranda was named second best hotel restaurant in Spain for the national newspaper &#8220;El País&#8221;</p>
<p>In 2020, the restaurant was relocated within the Es Princep hotel in Palma’s old town (Mallorca) where it has been recognized of its first Michelin star just after the opening.</p>
<p>At UNO MAS, highlight taste experiences to look forward to on his multi-course menu include<b> “Majorica Oyster”</b> freshly shucked pickled pearls, horseradish &amp; caviar,<b> “Amphora” </b>slightly spicy rock octopus All I pebre,<b> “The Black Egg” </b>white onion and cuttlefish caviar,<b> “Seared Amberjack”, </b>roasted red peppers coulis and piquillo pepper leather<b>, “Spanish Wagyu Beef” </b>coal grilled endive, crispy pulled beef, <b>“Sweet Burrata</b>”, goat milk cream &amp; skin, strawberries, and basil.<b> </b></p>

<p>For one night only, Guest Chef Carlos Montobbio from ESQUINA Singapore with more than 12 years of kitchen experiences. He translates Spanish and Catalan flavors inspired by his heritage and personal culinary memories into contemporary produce-driven dishes through a mix of traditional and modern techniques.</p>

Next is <b>Iberico Pork Jowl</b>, chipotle, pickled pear, togarashi and <b>Grilled Spanish Octopus</b>, Jerusalem Artichoke Puree, Burnt Onion, Bacon Oil.Then, <b>Wagyu beef cheeks</b>, &#8220;mole poblano&#8221;, baby corn, sour cream and <b>BBC: Beer Stout Ice Cream</b>, Banana, Warm Salted Caramel.
