Banyan Tree Bangkok has launched Saffron Grill, a new dining destination dedicated to fire-driven Thai cuisine and the newest chapter in the hotel’s Saffron portfolio. The opening expands the Saffron family, joining Saffron, Saffron Sky Garden, and the Saffron Cruise on the Chao Phraya River, with a concept centred on Thailand’s grilling traditions reimagined through modern technique and deep cultural roots.
Saffron Grill’s design follows the Fleur and Flame concept, where nature and fire exist in quiet balance. Fleur reflects Thailand’s deep ties to flora, ritual, and craftsmanship, while Flame embodies movement, energy, and the primal spirit of Thai cooking, shaping an atmosphere that feels contemporary yet culturally rooted. Moreover, sustainability underpins every aspect of the experience, from sourcing to waste reduction. The restaurant works closely with Thai farmers and local producers, including Klong Phai chicken, river fish from Nakhon Sawan, and seed growers in Chiang Mai.
Built around three guiding pillars – Smoke, Spice, and Sustainability – Saffron Grill’s kitchen runs on a no- gas philosophy, relying instead on charcoal, firewood, and craft, while the menu is shaped by both flame and time, pairing live-fire cooking with processes such as brining, curing, fermenting, and dry aging to intensify flavor and refine texture.
The concept also draws from Thailand’s everyday relationship with fire, from family kitchens and riverside markets to festival gatherings. Signature dishes highlight these roots through contemporary presentation, including Grilled Pacific Salmon with Spicy Rice Noodle Salad, Chargrilled Catfish Skewer with Sweet Fish Sauce & Edible Fern, Spicy Beef Tartare with Ant Larvae, 3-Minute Charred Beef Sirloin with Thai Crispy Garlic Oil, Charred Pomfret – Grandma’s Chilli Marinade and Grilled Glutinous Corn with Longan Flower Honeycomb & Toasted Corn Ice Cream
