ลุยแคว้นบริตตานีเที่ยวนี้  ดั้นด้นไปเยือนอาณาจักรบอร์ดิเยร์   (Beurre Bordier)  ราชาแห่งเนยที่คุณภาพคับแก้ว  การผลิตทุกขั้นตอนทำในแบบหัตถกรรม หรือ  artisan   ได้รับการยกย่องจนกลายมาเป็นเนย “ชั้นสูง” เสิร์ฟบนโต๊ะระดับ 3 ดาวมิชลิน ที่เลื่องชื่อที่สุดของฝรั่งเศส

เมื่อหลายปีก่อน ได้รู้จักกับ ฌ็อง-อีฟ บอร์ดิเยร์ (Jean-Yves Bordier) เจ้าของและมาสเตอร์แห่งเนยคนนี้ ในงานเทศกาลอาหารที่ชื่อว่า French Foodies จัดโดยสถานทูตฝรั่งเศส  หนึ่งในโปรแกรมนั้นคือ ดินเนอร์ชีสและเนย  งานนี้  งง ๆ เล็กน้อย เพราะเคยไปแต่ดินเนอร์ชีส แต่ยังไม่เคยเห็นใครจัดดินเนอร์เนย ระหว่างทานข้าว ทูตวัฒนธรรมฝรั่งเศสในขณะนั้นแนะนำให้รู้จักกับ เมอซิเออร์ บอร์ดิเอร์  ที่หอบหิ้วเนยมาให้ชิม 1 ถาด ถ้าจำไม่ผิดมีเกือบ 10 ชนิด แล้วก็นั่งลงอธิบายด้วยความตั้งอกตั้งใจ  ซึ่งเราก็ตั้งใจฟังเพราะความอยากรู้  ตามมาด้วยธรรมเนียมคือการชิมเนย   รสชาติอร่อยเลอเลิศ  แต่ก็ยังไม่เข้าใจอยู่ดีถึงที่มาของเนยมากมายหลายชนิด
