A Four-Hands Cantonese Culinary Collaboration Returns to Banyan Tree Bangkok

After a highly acclaimed debut last year, Banyan Tree Bangkok is thrilled to welcome back its special four-hands Cantonese collaboration — an extraordinary dining affair uniting two culinary virtuosos. Chef Wong from Hotel ICON in Hong Kong and Chef Simon from Banyan Tree Bangkok’s renowned Bai Yun restaurant will once again join forces to craft an exceptional eight-course menu that promises to enchant the palate.

From 18–20 September, guests are invited to experience this exclusive three-night engagement where tradition meets innovation. The two chefs will combine their mastery of Cantonese cuisine with modern techniques, creating a menu that celebrates time-honoured flavours elevated with premium local ingredients and contemporary flair.

Menu highlights include:

• Trio of Starters – “Baiyun” Roasted Pork Belly, Chilled Razor Clam with Sea King Dressing, and Premium XO Sauce with Pen Shell.

• Baked Mud Crab – a Hong Kong classic with Above & Beyond Chef Wong Recipe.

• Steamed Wild Coral Grouper with Roasted Yellow Pepper Sauce.

• Baiyun Signature Braised Whole Abalone with Hong Kong Egg Noodles.

Chef Wong, Executive Chinese Chef at the Michelin-recommended harbour view restaurant, Above & Beyond at Hotel ICON, is celebrated for his refined Cantonese creations that balance authenticity with inventive touches.

Chef Simon Kin Man Kwok, Bai Yun’s resident Cantonese Chef since 2021, brings a lifelong passion for the art of Chinese cuisine, delighting guests from the 59th floor with signature specialties and exquisite presentations.

This limited-edition dining experience is priced at THB 2,999 per person and is available for three nights only, 18–20 September.
