THREE MICHELIN-STARRED MAESTROS Mauro Colagreco from Mirazur and Julien Royer from Odette join forces in delivering the most exclusive dining experience of the year at Capella Bangkok’s Côte by Mauro Colagreco.
For two exclusive evenings, Côte by Mauro Colagreco, Capella Bangkok’s Michelin-starred fine-dining restaurant renowned for its delicately layered flavours of the Mediterranean Riviera, will be the stage for a star-studded gastronomic affair. Two culinary titans, Mauro Colagreco and Julien Royer, will join forces to craft a one-of-a-kind dining experience exclusively for the Thai capital’s most discerning gourmands.
With a wealth of experience at their respective restaurants, Mirazur in the undulating hills of France’s Côte d’Azur, and Odette in the iconic National Gallery of Singapore, Colagreco and Royer are some of the world’s most acclaimed gastronomic talents. Both have received top accolades in World’s 50 Best Restaurants and Asia’s 50 Best Restaurants lists, and have earned three Michelin stars for their creativity and innovative use of fine ingredients.
Sharing a passion for seasonal and artisanal produce, the chefs will deliver an imaginative collaboration that celebrates the exquisite flavours of their respective localities. A deep respect to the local bounty of the Mediterranean Riviera and their simple yet sumptuous natural flavours will be translated through Colagreco’s culinary inventiveness. Meanwhile, Royer’s exquisite mastering of techniques from the French kitchen will be conceptualised through the chef’s globally influenced vision, which is reflective of Singapore as a multicultural producers with deep reverence to traditional farming methods and sustainable practices.

Guests are invited to embark on a culinary expedition through an exquisite nine-course menu that celebrates ground-breaking innovation, deep respect to locality and fine culinary techniques by the two legendary three-Michelin-starred chefs. Chef Davide Garavaglia, Executive Chef of Côte by Mauro Colagreco and the recipient of the MICHELIN Young Chef Award 2023, will join in to enliven the night with his signature touch on Mediterranean and local Thai ingredients. The culinary experience can be accompanied by wine pairing curated by Capella Bangkok’s Head Sommelier Sabino Iacobone.
