CHEF ROLF FLIEGAUF

A German native, young and passionate Chef Rolf Fliegauf was born in 1980 in the small Bavarian town of Nördlingen.

In the winter months, he heads up to Ristorante “Ecco on the Snow” in Saint-Moritz, for which he received two Michelin stars in 2012 at the humble age of 31. In summer, he and his team decamp to the renowned Hotel Giardino Ascona and Ristorante Ecco for which he was awarded one Michelin star in 2007 and a second in 2010.

As a child, Fliegauf preferred to spend his time in the kitchen of his parents’ restaurant rather than with friends in the kindergarten. His career began at Dehner Blumen Hotel in Rain am Lech. Stints at Traube Tonbach in Germany’s Black Forest, De Librije in Zwolle, Netherlands, and Heston Blumenthal’s Michelin-starred restaurant The Fat Duck in UK were all important career milestones.

In his free time, Chef Fliegauf likes to travel to get inspiration for new products and techniques. “You only continue to develop by questioning yourself” he says.
