Mandarin Oriental, Bangkok is delighted to welcome Chef Alain Solivérès, chef de cuisine from the two-star Michelin Le Taillevent in Paris, at Le Normandie from Monday 4 – Saturday 9 July 2016.

A native of Beziers in southern France, Chef Solivérès has worked in many of France’s most prestigious fine dining institutions over the past three decades. He started his culinary career in 1979 and has worked at a number of star-studded French restaurants including Le Lucas Carton, Le Grand Hotel and the Michelin three-star Le Louis XV, where he was mentored by the famed Chef Alain Ducasse until 1989.  That same year, when Chef Solivérès was only 26 years old, Chef Ducasse offered him the position of chef de cuisine at La Bastide de Gordes, where he worked until 1992 and obtained his first Michelin star.  Before joining Le Taillevent in 2002, Chef Solivérès was the chef de cuisine of the two-star Michelin Les Elysées du Vernet at Hotel Vernet.

Le Taillevent was founded in 1946 by André Vrinat and was the only restaurant to become a full member of the Comité Colbert, an exclusive association of French luxury brands.  The iconic restaurant has been one of the most sought-after establishments in Paris.  The name of the restaurant is a tribute to Guillaume Tirel, also known as “Taillevent” – the legendary cook and author of the first French cuisine book, which has been regarded as the founding principle of French gastronomy since the 14th century. Le Taillevent celebrates its 70th anniversary this year and joins Mandarin Oriental, Bangkok in our 140th Anniversary to mark both auspicious celebrations exclusively at Le Normandie.

Chef Solivérès’ motto is “true cooking is all about simplicity”. Celebrated for his authentic French gastronomy, Solivérès will showcase his culinary philosophy of “using tradition to inspire innovation, and respecting the seasons”.

Advanced reservations are highly recommended.

5-Course Lunch at THB4,200++ (THB4,943.4net) with optional of 3-glass wine pairing at THB1,750++, and 5-glass wine pairing at THB2,800++.
