‘Coalescence’ promises to look at Thai ingredients through a global lens – with local flavours meeting Japanese and  French cooking techniques in a unique 10-course dinner. 

ASAI Bangkok Chinatown is teaming up with multi-award-winning Chefs Joe Jantraget and Saki Hoshino of Samlor restaurant for a two-day pop-up dinner event at the hotel’s vibrant JAM JAM Eatery and Bar on Tuesday 22 March and Wednesday 23 March 2022.

Taking control of the kitchens from 6pm-11pm, the rising stars of New Thai cuisine will fully embrace their vision to redefine local flavours to create a 10-course culinary adventure starring their unique no-frills comfort food that bridges the gap between Thai and international cuisine.

“Expect local flavours crafted with Japanese and French techniques, and elements from far away used to highlight Thai tastes in ways you’ve never imagined,” says Chef Joe.

Grilled River Prawn with Tamarind and Chili

Thai Wagyu beef tartare; Caramelised chilli miso; Hay-roasted chicken breast in Panang curry sauce with cashew nuts; and Roasted grouper with mushrooms and black pepper jus are just a few of the highlights of the ‘Coalescence’ menu.

The experience will culminate with sweets from the master of desserts, Chef Saki.

Drinks come courtesy of the wine experts at Wine Garage. DJ Pragueputth, Beam’s resident DJ and a regular fixture at popular cocktail bars such as Tropic City and Sunray, will curate a funky soundtrack for the occasion.

Price: THB 2,900 ++ per person for a 10-course dinner
