Pan-seared scallop, razor clams, black trumpet mushrooms, Brussels sprout royale and shellfish juice
Roasted lamb fillet, purple potato purée, salsify in juice and Lapsang Souchong tea emulsion
Rose ice cream in crystalized rose petals
