Bangkok’s First Symposium on “{Re} Food Forum”, to be Held on 19-20 March 2018, along with Collaborative Dinners and Masterclasses

{Re} is a two-day symposium exploring waste, farming and sustainability in the food industry in Asia. The event will be held in Bangkok on March 19 and 20, 2018.

The creation of chefs Duangporn ‘Bo’ Songvisava and Dylan Jones, who own and run the acclaimed Thai cuisine restaurant, Bo.lan, and writer and farmer Leisa Tyler, the event will bring together multiple stakeholders to discuss the future of food and food production in the hospitality industry in Asia.

“The idea of the {Re} Food Forum is to create awareness about how we consume food responsibly”, says Duangporn ‘Bo’ Songvisava. “It is about considering all aspects of food production, from environment and sustainable farming techniques, to packaging, waste and the use of indigenous ingredients”

Broken into a series of key topics, each day will involve up to 40 speakers, including scientists, chefs, farmers, food historians and social entrepreneurs giving concise 10-20-minute inspirational talks. Topics include being resourceful even in a Nordic winter by Magnus Nilsson from the legendary Swedish restaurant Faviken; Creating a market for high value endemic produce and using market forces to help preserve cultural identity by Helianti Hilman, a founder of endemic Indonesian foodstuff company Javara; Land-care philosophies and farm to table by Dan Hunter, the acclaimed chef of restaurant, Brae, in rural Victoria; The true cost of food production and if organics can feed the world by Thai organic farmer Lalana Srikram from Raitong Organics Farm in Srisaket, Thailand; Upscaling waste into food by Shinobu Namae from two-star Michelin restaurant L’Effervescence in Tokyo

Lunches served at the Food Forum will be cooked by a coterie of local and international chefs using rejected produce. On day one, lunch will be Sunday Brunch to Monday Lunch; Those Thai Chefs cooking leftovers from the Hyatt’s Sunday Brunch into a delicious – and hygienic- Monday lunch. On day two, which is titled Rejected! You’re just not pretty enough, a clutch of Bangkok’s best chefs, including Garima Arora from GAA, Tim Butler from Eat Me and Arnie Marcella from Bunker will cook with vegetables that due to being misshapen or too big or too small, are typically thrown away by supermarkets.

Alongside the two-day Food Forum, {Re} will hold a series of collaborative dinners and masterclasses with chefs. All exterior events will be run on {Re}’s core principals, including limiting waste, using only sustainable and locally grown produce and working with Asian endemic ingredients, many which due to the onset of commercial farming, are on the verge of disappearing. “Through the dinners we hope to show that using endemic, locally sourced – and even what is sometimes considered rejected – produce can still deliver a luxurious and world class dining experience”, says Leisa Tyler.

A series of small, intimate Masterclasses will be held in conjunction with the Forum on Mar 19-20 at The Residence, Grand Hyatt Erawan Bangkok. These including a class the fêted pastry chef and owner of Room4Dessert in Bali, Will Goldfarb on March 20, who will be making a Balinese meringue from local palm sugar. Shinobu Namae will discuss the crucial Japanese stock base dashi in his class on the same day.

Collaborative dinners include a Thai BBQ at the Anantara Riverside. The night of open pit fires and extraordinary local produce will be prepared by chefs David Thompson, Prin Polsuk, Bo.lan, Err and Those Fcuking Chefs on March 16. This will be followed by a six-hands dinner on March 18 by Asia’s Rising Stars, Richie Lin from MUME in Taipei, Eelke Plasmeijer from Locavore in Bali and Thitid ‘Ton’ Tassanakajohn from Ledu in Bangkok. Then on March 21, two-Michelin starred chef Shinobu Namae of Tokyo’s l’Effervescence will join kitchen forces with Bangkok’s own Garima Arora from Gaa.

“We hope that through the {Re} Food Forum, we can inspire people involved in food production to start making the changes needed for a better and more sustainable industry”, says Dylan Jones. “We hope we can prompt initiatives and show how the food systems, whilst part of the problem- can also be part of the solution.”

{Re} is being run non-for-profit through the foundation, BIOTHAI Thailand. Any proceeds will be donated to sustainable agricultural and food related charities and programmes in Thailand and Southeast Asia.

The word {Re} means ‘in consideration of’. It is also a prelude to the words reuse, recycle, refuse, revise, reconsider, reinvent, renew etcetera.

นำโดยเชฟโบ ดวงพร ทรงวิศวะ และเชฟดิลลัน โจนส์ (Dylan Jones) สองเชฟจากร้านอาหารไทยโบลาน  และ ลิซ่า ไทเลอร์ (Leisa Tyler) นักเขียนและเกษตรกรที่จับมือร่วมกันจัดงาน {Re} เพื่อพูดคุยภายใต้หัวข้อสนทนาหลักในงานคือ “เรื่องการบริโภคอย่างมีความรับผิดชอบเพื่อความยั่งยืนในเอเชีย”

“ความตั้งใจแรกที่อยากจะจัดงาน {Re} Food Forum นั้น เพราะเราอยากสร้างความตระหนักรู้ให้คนกลับมาฉุกคิดและหันมาใส่ใจกระบวนการบริโภคอย่างรับผิดชอบ” เชฟโบ ดวงพรกล่าว “งานนี้จึงเป็นการพูดคุยที่ครอบคลุมทุกแง่มุมของการบริโภค ตั้งแต่สิ่งแวดล้อมของวัตถุดิบและเทคนิคการเกษตรกรรมและการประมงแบบยั่งยืน การใช้วัตถุดิบและผลิตผลท้องถิ่น ไปจนถึงการจัดการกับขยะจากทุกกิจกรรมภายในงาน เพื่อให้ได้ใช้ประโยชน์ของทรัพยากรนั้นอย่างสูงสุด”

{Re} ชวนพูดคุยร่วมกับนักเล่าเรื่องในวงการที่เกี่ยวข้องกับอาหารจากไทยและต่างประเทศ ทั้งนักวิทยาศาสตร์ เชฟ เกษตรกร นักประวัติศาสตร์อาหารและนักธุรกิจรุ่นใหม่ที่ใส่ใจสังคม วัฒนธรรมและสิ่งแวดล้อม  ถึงเรื่องความยั่งยืนที่เกี่ยวข้องเชื่อมโยงกับอาหารและวิถีชีวิตของผู้คนตลอดห่วงโซ่ จะเล่า พูดคุย  ถกเถียง อภิปรายและร่วมกันค้นหาคำตอบในเรื่องต่าง ๆ ไม่ว่าจะเป็นความหลากหลายทางชีวภาพของพืชและสัตว์พื้นถิ่นที่เริ่มเลือนลางจางหายไปจากสังคมบริโภคยุคนี้  ทั้งเรื่องของขยะที่เกิดขึ้นทุกห้วงขณะของการบริโภคจากต้นน้ำถึงปลายน้ำ รวมไปถึงการส่งผ่านภูมิปัญญาด้านศาสตร์และศิลป์ของการบริโภคอย่างยั่งยืน โดยใช้เวลาประมาณ ๑๐ – ๒๐ นาทีในแต่ละเรื่อง โดยได้รับเกียรติจากนางเฮลีอานติ ฮิลแมน (Helianti Hilman) หญิงแกร่งจากอินโดนีเซียที่ก่อตั้ง จาวารา (Javara) ธุรกิจอาหารที่เล็งเห็นคุณค่าและความสำคัญของผลิตผลพื้นถิ่น เพื่อรักษาไว้ซึ่งภูมิปัญญาและเอกลักษณ์ที่สำคัญของภูมิภาคไว้ เชฟแดน ฮันเตอร์ (Dan Hunter) เจ้าของร้าน Brae วิคตอเรีย จากออสเตรเลีย ที่มีปรัชญาและความเชื่อในการจัดการดูแลผืนดินและพื้นที่การเกษตรแบบ Land-care  เชฟชิโนบุ นาเมะ (Shinobu Namae) เจ้าของร้าน l’Effervescence ในกรุงโตเกียว เชฟที่รักในการใช้อาหารให้เกิดประโยชน์สูงสุด และท่านอื่นๆ กว่า ๔๐ ท่าน

นอกจากการเล่าเรื่อง พูดคุย หรือแม้แต่ถกเถียงกันแล้ว เชฟบางท่านยังได้เอื้อเฟื้อเวลาเพื่อแสดงปรัชญา ความเชื่อ ความหลงใหลในเรื่องราวผ่านมื้ออาหารและมีมาสเตอร์คลาสสอนทำอาหาร โดยมื้ออาหารสุดพิเศษจะจัดขึ้นเพื่อทำให้แนวคิดความเชื่อของ {Re}  นี้เป็นรูปธรรมที่สามารถลิ้มรสได้ มื้ออาหารเหล่านี้จะถูกจัดขึ้นในแนวทางที่สอดคล้องกับแนวคิดหลักที่ใช้วัตถุดิบพื้นถิ่นของกินพื้นบ้าน ลดปริมาณขยะที่เกิดจากกิจกรรมการกิน การทำอาหารรวมไปถึงการใช้วัตถุดิบจากแหล่งที่มาที่มีความยั่งยืนอีกด้วย

ทั้งสองวันที่ {Re} Food Forum จะมีบริการอาหารโดยเชฟทั้งไทยและต่างชาติ ที่จะปรุงอาหารจากวัตถุดิบประเภทของเหลือหรือถูกคัดทิ้งเป็นสุดยอดมื้ออาหาร ซึ่งในวันจันทร์ที่ ๑๙ จะมีมื้ออาหารกลางวัน “Sunday Brunch to Monday Lunch” ที่เป็นการนำเอาอาหารที่เหลือจากบุฟเฟ่ต์มื้อสายวันอาทิตย์ของทางโรงแรมมาปรุงใหม่ โดยทีมฅนฅรัวพวกนั้น ส่วนวันอังคารที่ ๒๐ จะเป็นมื้อกลางวันภายใต้ชื่อ  “Rejected! You’re just not pretty enough” นำโดยเชฟการิมา อาโรรา (Garima Arora) จากร้าน Gaa เชฟทิม บัทเลอร์ (Tim Butler) จากร้าน Eat Me และเชฟอาร์นี มาร์เซลลา (Arnie Marcella) จากร้านบังเกอร์ ที่จะมาร่วมทำอาหารกันจากผักเหลือจากซุปเปอร์มาร์เก็ตที่ถูกคัดทิ้งจากเกณฑ์คัดขนาดไม่ได้มาตรฐานตามขนาดหรือรูปลักษณ์ที่ไม่สวยงาม

ส่วนการสาธิตการทำอาหารมาสเตอร์คลาสที่จะมีขึ้นในวันที่ ๑๙ – ๒๐ มี.ค. นี้ที่เดอะ เรสซิเดนส์ โรงแรมแกรนด์ ไฮแอท เอราวัณ กรุงเทพ  ได้เชฟมากความสามารถ อย่าง เชฟขนม วิล โกลด์ฟาร์บ (Will Goldfarb) จากร้าน Room4Dessert บนเกาะบาหลี มาจัดการสาธิตการทำขนมเมอร์แรงก์จากน้ำตาลปาล์มในวันที่ ๒๐ มี.ค. และเชฟชิโนบุ นามาเอะ (Shinobu Namae) ที่จะมาร่วมเล่าเรื่องราวและแบ่งปันความรู้เกี่ยวกับการทำดาชิ น้ำซุปที่เป็นส่วนผสมพื้นฐานชิ้นสำคัญของอาหารญี่ปุ่นในวันเดียวกัน

นอกจากนี้ยังมีการจัดดินเนอร์ร่วมกันของเหล่าเชฟ โดยเริ่มตั้งแต่มื้อบาร์บีคิวแบบไทยที่โรงแรมอนันตรา ริเวอร์ไซด์ ในวันที่ ๑๖ มี.ค. ซึ่งเชฟเดวิด ทอมป์สัน (David Thompson) เชฟปริญญ์ ผลสุข เชฟจากร้านโบลานและเออ และทีมเชฟ  มาร่วมจัดเตรียมวัตถุดิบท้องถิ่นที่น่าสนใจสำหรับมื้อใหญ่นี้ ต่อด้วยมื้ออาหารในวันที่ ๑๘ มี.ค. โดยเชฟดาวรุ่งทั้งสาม ได้แก่ เชฟต้น-ธิติฏฐ์ ทัศนาขจร จากร้านฤดู (Le Du) เอลเก้ พลาสไมเยอร์ (Eelke Plasmeijer) จากร้านโลคาวอร์ Locavore จากเกาะบาหลี และเชฟริชี่ ลิน (Richie Lin) จากร้าน MUME ในไทเป และมื้อพิเศษในวันที่ ๒๑ มี.ค. โดยสองเชฟต่างสัญชาติ เชฟชิโนบุ นามาเอะ จากร้านอาหารระดับสองดาว เอฟแฟเวสเซน (l’Effervescence) ที่จะมาร่วมกับกับเชฟการิมา อาโรรา จากร้าน Gaa

เชฟดิลลัน โจนส์ (Dylan Jones) ได้กล่าวไว้ว่า  “ผมหวังให้เวทีอย่าง {Re} Food forum เป็นแรงบันดาลใจให้กับคนที่เกี่ยวข้องกับการผลิตอาหารให้หันมาสนใจในการผลิตอาหารอย่างยั่งยืนและสร้างความตระหนักรู้ถึงระบบการผลิตอาหารที่ดีให้เกิดขึ้นในสังคม”

{Re} เป็นงานที่จัดขึ้นโดยไม่หวังผลกำไร โดยมีมูลนิธิชีววิถี (BIOTHAI) ร่วมให้ความร่วมมือในการจัดงาน หากมีเงินเหลือจากการรับบริจาค {Re} จะนำเงินส่วนดังกล่าวส่งมอบให้กับโครงการในเอเชียตะวันออกเฉียงใต้ หรือโครงการในประเทศไทยเพื่อสนับสนุนความยั่งยืนและมั่นคงทางทรัพยากรอาหารในภูมิภาคนี้สืบไป
