The Renaissance Bangkok Ratchaprasong Hotel welcomes Chef Luigi Taglienti from LUME restaurant, Milan, who will bring the flavours of Italy in a Michelin Star dining unique experience at La Tavola Wine & Bar in Bangkok from the 4th to 8th of June 2019. Through his dishes, Chef Luigi makes sure that each will be full of aromas of Italian cooking where heritage meets evolution.

Chef Luigi offers a full 5 or 7 course menu, including; Liguria Shrimp à la Plancia, Scrambled Oyster; Risotto with Fresh Turmeric Root and Laurel Powder; Prime Piemontese Beef in Italian Sauce; Turbot and Celeriac and even Black Truffle Tiramisù, a perfect marriage between savoury and sweet. To enhance the taste buds and indulge in a pool of flavours, wine pairing is available upon request by the acclaimed winery Alois Lageder.

ABOUT CHEF LUIGI TAGLIENTI

Chef Luigi was born in Liguria, a coastal northwestern region, situated not too far from France and Monaco. Regardless of his birthplace, chef Luigi’s cooking is strongly dominated by the flavours from all over Italy due to his family background where each member of the family comes from a different part of the country. He spent many years abroad, and despite feeling very much attached to France, nothing can beat the heritage from his motherland.

When he returned to Italy, he worked in many restaurants and trained under many renowned chefs such as the famous Milanese born Ezio Santin, who built up his chef career without going to any culinary school. From there, the young Luigi found his identity, passion and cooking style by waking up the cooking methods that were used in the past and made traditional cooking meet with modern techniques. Each dish that he created reflects back the memories from the old times. According to him, – it’s like re-designing the traits of the well-known, but always doing so with humility, austerity and simplicity, eschewing banality and privileging unknown flavours that somehow conjure up the past and bring out the best in one another - in other words, the taste recalls good old memory with a twist of contemporary appearance.

He is best known to use lemon in his recipes, which became the hallmark of his cooking technique in bringing flavours that what he calls as “an alternative of tactile and taste sensations that give brio, speed force and freshness to each morsel, making diners eager for the next dish”.

Since 2009, after having mastered and developed his unique style, Luigi quickly rose to fame. He won the coveted ‘Young Chef of the Year’ Award and in the same year the Michelin Guide Awarded him a Star. In 2012, while working at the Ristorante Trussardi alla Scala, his culinary project received Michelin Star and the restaurant was awarded as the best restaurant in Milan. Since 2016 until present, Luigi is currently based as the head of LUME in Milan. Within few months under his control, the restaurant received its first Michelin Star and in 2017 it was ranked as ‘Best New Restaurant in Europe 2017’ by OAD Opinionated about Dining.
